There are plenty of days when I can barely get dinner on the table let alone something sweet to finish the meal off. However, when I can find a few minutes to spare, I do like to surprise my family with a special sweet treat now and again… like this simple banana cake recipe.

This easy banana cake recipe is the perfect lightweight spring or summer dessert option. It goes perfectly with freshly brewed coffee and is made even better by the addition of the easy caramel icing recipe included in this article.

This crumb-licking-good, moist banana cake recipe is a great option for the busy chef. The most complicated thing about it is “making” sour milk (combining milk and vinegar). Plus, this simple banana cake recipe is a great way to use up those bananas you keep forgetting about… yeah, those really ripe ones nearly hidden behind the coffeemaker.

If you aren’t sure how to make banana cake, no worries. It really isn’t that hard. Even the easy caramel icing recipe can be tackled in just a few minutes.

However, I don’t just like this simple banana cake recipe and easy caramel icing recipe because its quick and uncomplicated. On top of being simple, these recipes are delicious and the moist banana cake recipe isn’t too sweet. If you’ve got a raging sweet tooth, you’ll definitely want to take advantage of this easy caramel icing recipe but if you’re more of a savory palette (or maybe just trying to watch those calories) the simple banana cake recipe will probably hit the spot just fine.

Can I Use Frozen Bananas?

Though I’ve never used frozen bananas, I would imagine they would be just as delicious in this recipe. Make sure you thaw the bananas at room temperature and drain any liquid. Then follow the recipe as listed below. 

BANANA CAKE INGREDIENTS
1/4 cup shortening
1/4 softened butter
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups all purpose flour, sifted
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1 cup sour milk*
2 ripe bananas

*Sour milk – mix 1 cup of milk with 1 tablespoon of vinegar. Let stand 10-15 minutes.

CARAMEL ICING INGREDIENTS
1/2 cup butter
1 cup light brown sugar
1/4 cup milk
2 cups powdered sugar

SIMPLE BANANA CAKE RECIPE DIRECTIONS

1. Preheat oven to 350° and grease a 9 x 13 baking pan with butter.

2. In a large mixing bowl, beat together butter and shortening until creamy.

3. Mix in sugar and eggs.

4. Mix in flour, baking powder, and baking soda.

5. Mix in sour milk and vanilla extract.
Note: You make sour milk for this simple banana cake recipe by combining one cup of milk with one tablespoon vinegar. Allow the mixture to stand for 10-15 minutes before using in this recipe.

6. Mix in ripe bananas.

7. Pour cake batter into the baking pan

8. Bake for 25-30 minutes

9. Remove and let cool.

Believe it or not, if your little one has reached the “terrible twos” he or she is probably ready for some basic chores, and a good way to introduce this concept is with a chore calendar printable (like this one). According to Roger W. McIntire, a University of Maryland psychology professor, “Kids can do a lot of chores at an early stage. We hold back too long because we think they ought to be ready first. But that puts the cart before the horse. That is, they’ll learn by doing.”

The key to getting your kids started with chores is to:

For example, you might assign a twelve-year-old to take out the garbage, so on his or her chore calendar printable, you would put “take out the garbage” and then put a check mark on Thursday (or whenever your garbage day is). Don’t just use this chore list for kids to tell your child what to do. Instead, use it to motivate your child to complete his or her chores. For example, tell your child to replace a check mark with a star sticker when the chore is completed.

Getting your kids to trade screens for sunscreen can be a challenge … especially when you can’t wrap the experience in exciting packaging like a trip to the pool or their fav park on the other side of town. However, this nature walk scavenger hunt printable is an easy (and free) way to get your little explorer looking forward to his or her next outdoor adventure! 

The beauty of this downloadable nature scavenger hunt PDF is that it’s so simple but still fun. You can probably utilize this nature walk checklist in your own backyard or neighborhood, so there is no need to pack the kids up and drive anywhere to have a good time. 

While the 14 items to find are all fairly common, your kids will still need to be tuned into their environment to spot them … especially that bonus item, the four-leaf clover! And if your kids are really struggling to find that lucky clover, consider creating one and hiding it for them.
