Toss the cubed pork with 2 tablespoons of corn starch and mix until coated.
Cook the pork in batches: Heat 1 tablespoon of oil in a large non-stick skillet and add half the pork. Cook over medium high heat, for 4 - 5 minutes until the pork is browned and cooked through. Remove to a bowl. Add the remaining oil and cook the remaining pork. Remove to bowl and set aside.
Add the sesame oil to the pan and cook the broccoli and pea pods for 2 - 3 minutes, until crisp tender.
Add the garlic and ginger and cook for an additional minute, until fragrant.
Pour in the sauce mixture and bring to a boil over medium high heat. Cook for 2 minutes then add the slurry (1 tablespoon corn starch mixed with 2 tablespoon of water) and cook for another 2 minutes, until thickened.
Add the cooked pork and toss to coat.
Serve the pork over cooked rice and top with green onions.
