This Irish cake is super simple to make.  It’s even better made ahead of time.  You make the curd the day before.  I whipped mine up as I was preparing another recipe for minute.  In the microwave, lemon curd comes together in no time!  Just one minute bursts of cooking and stirring until it’s thick and creamy and you’re done!  I strained mine through a fine mesh strainer to make sure there wasn’t any bits of cooked egg or a missed seed in there.  Top with plastic wrap and let it chill.  I took mine out about an hour before making the cake so the curd wasn’t fridge cold.
