CAN I MAKE BUTTERSCOTCH SAUCE AHEAD OF TIME?

You know, we were just going to suggest that. This is a pretty great recipe for young chefs to whip up for themselves…except for the hot butterscotch part. You can go ahead and make the sauce ahead of time (it’ll need to cool down anyway) and stash it in the fridge. Whenever your little wizards are craving a magical beverage after a hard day of getting up to no good, they can whip up a sweet treat. Stored in the fridge, in a closed jar, the sauce will last about 2 weeks.

Made with simple ingredients and not too much mess, these sweet and creamy lemon-lime drinks are sure to be a hit with everyone, kids and adults alike. No one can resist the combination of flavors and the foamy texture.

Ingredients 

  • 1 stick (4 oz) unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream
  • 2 1/2 cups lemon-lime soda
  • Ice

Instructions 

  • In a medium saucepan over medium-low heat, melt butter.
  • When the butter is melted, add brown sugar, salt, and vanilla extract. Whisk to combine.
  • Cook mixture, stirring frequently, until the brown sugar is completely dissolved, 5 to 7 minutes.
  • Whisk in the heavy whipping cream and continue to cook for 1 minute more.
  • Allow mixture to cool to room temperature, 15 to 30 minutes.
  • Fill 8 large glasses halfway with ice. When cool, divvy mixture between the glasses.
  • Slowly top with soda, be careful not to overfill, as the mixture will bubble and foam! Stir to blend and enjoy.

Butterscotch Beer--Samantha F.

This butterscotch beer is like key lime pie in a glass! This enchantingly sweet soda is rich and delicious and it has the world’s greatest mouthfeel. I tried this recipe with Spindrift Lime Seltzer, Trader Joe Sparkling Limeade, San Pellegrino Limonata, and Sprite. The tastiest versions were with the TJ’s Sparkling Limeade and the Limonata. The others didn’t add much besides bubbles.

I made a full batch but kept half of the syrup aside for other uses because a pint of the butterscotch is basically infinity servings of soda. Just a note, I wouldn’t let a kid make this unsupervised due to the danger of burns from the melting sugar.

In all honesty, I spied this recipe first on the list and looked no further. My daughter and I love Harry Potter and jumped at the chance to create this drink that has us dreaming about Hogsmeade. My children were thrilled to indulge in this sweet, delicious treat!

The recipe took very little time to create and the ingredients were those many will have on hand. The butterscotch made enough to fill half a cup for each glass (if using 4 beer mugs). I had enough butterscotch to drizzle over the top of each drink. The only alteration I would make is cutting down the salt (perhaps half a tsp instead of a whole tsp).

This butterscotch beer is a fun drink for adults and kids alike. It is easy to prepare and makes a nice treat for a hot day or a cozy time by the fire. The basic syrup really only took minutes to prepare and the longest part of the whole process was waiting 15 minutes for it to cool so we could make the drinks.

It was sweet but not as sweet as I thought it would be. I found tilting the glass a bit and pouring the soda along the side of the glass kept the foaming to a minimum. And by making the syrup ahead of time and keeping it in the fridge I can have it ready for grandkids and grandpas anytime.
