This new recipe for Air Fryer Peppers and Onions is so easy and good that it might end up being one of your favorite side dishes! I know some people aren’t bell pepper fans, but I love grilled peppers, roasted peppers, and stuffed peppers, so I had no doubt that I’d love peppers and onions cooked in the Air Fryer. And when I tested this recipe with Kara, we both thought it was completely a wow!

And if you don’t take time to marinate (which is completely optional) you can make the entire recipe including cutting up the veggies in about 20 minutes, which is also pretty great!

This is another one of those recipes where I thought my favorite Newman’s Own Classic Oil and Vinegar Dressing gave it just an extra touch of flavor! Check instructions for roasting this in the oven if you don’t have an Air Fryer, and I hope you’ll give this a try if you’re also a fan of peppers.

Can you make Air Fryer Peppers and Onions with one color of peppers?

You don’t have to buy both red and yellow peppers to make this recipe, and you can definitely use less-expensive green peppers if that what you prefer or what you find at the store.

What Air Fryer Did I use for the peppers and onions?

I became a big Air Fryer fan after I discovered the Cuisinart Convection Air Fryer Toaster Oven (affiliate link) which is what I used for this recipe. This air fryer has a larger basket, which was big enough to do three large peppers and a large onion but if your Air Fryer has a smaller basket you might need to cut the recipe in half.

What if you don’t have an Air Fryer?

You can definitely cook this side dish of sausage and peppers in the oven if you don’t have an air fryer. I would cook them at 450F/230C. Follow directions for preparing the vegetables and tossing with the seasonings, then drain them spread the vegetables out on a large baking sheet. The Air Fryer cooks hotter like a convection oven, so they will take a bit longer in the oven even if the temperature is higher. I’d start to check the oven-roasted peppers and onions after 10 minutes, and they’ll probably take about 15 minutes, depending on how crisp you like them.

Tips for making Air Fryer Peppers and Onions:

  1. Cut ends of bell peppers, remove seeds and membranes, and cut peppers into strips.
  2. Peel onion and cut into slivers about the same size as the peppers.
  3. Put onions and peppers into Ziploc bag (or a bowl) and toss with Newman’s Own Classic Oil and Vinegar Dressing and Italian Herb Seasoning.
  4. Let veggies marinate a bit if you have time, or drain right away in a colander placed in the sink.
  5. Set Air Fryer to 400F/205 C. Preheat if your Air Fryer needs it.
  6. Arrange veggies in the air fryer basket.
  7. Cook 4-5 minutes, then stir.
  8. Then cook 3-4 minutes longer, or until done to your liking.
  9. We liked the peppers and onions when they were still slightly crisp, so adjust the cooking time depending on how soft you like them.
  10. Season to taste with salt and fresh-ground black pepper and serve hot.

Ingredients

  • 2 large red bell peppers
  • 1 large yellow bell pepper (or use any colors you prefer)
  • 1 large yellow onion
  • 1/4 cup Newman's Own Classic Oil and Vinegar Dressing (or other low-sugar vinaigrette)
  • 1 tsp. Italian Herb Seasoning
  • salt and fresh-ground black pepper to taste

Instructions

  1. Cut ends of bell peppers, remove seeds and membranes, and cut peppers into strips. We made strips just over 1/2 inch wide and tried to make them all close to the same size.
  2. Peel onion, cut ends off, and cut into slivers about the same size as the peppers.

  8. Then cook 3-4 minutes longer, or until done to your liking.
  9. We liked the peppers and onions when they were still slightly crisp, so adjust the cooking time depending on how soft you like them.
  10. Season to taste with salt and fresh-ground black pepper and serve hot.
