The Stuft truck: Huge burgers with a twist

EVANSVILLE, Ind – Add one more to the exciting list of food trucks operating in the Tri-State: the Stuft Truck, which offers burgers, fries and onion rings with a big juicy twist.

Lindsey and Brett Daily of Newburgh inaugurated the truck in May with a sold-out day at the Evansville Food Truck Festival and continue to have it out several days a week at events and neighborhood spots.

“My husband’s dream has always been to own a food truck or restaurant, so we thought we’d start with the truck,” Lindsey said. “I worked at my job for almost 13 years and just quit at the end of May to do this full-time. We get more time with the boys (sons Cole, 8, and Caleb, 6). I can see them more, drop them off and pick them up and be more present at extracurricular things, which was the goal.”

The end goal is for Brett to also be able to work with the food business full time.

Now, the thing that makes Stuft burgers and onion rings so different is that they are, yes, stuffed.

Brett is a griller from way back, cooking up goodies every weekend on the grill, and one of his favorite things to make was stuffed burgers, which are a half-pound patty filled with a center of gooey goodness.

The diner gets to choose from five varieties. There is the original cheese, or bacon and cheddar, which is the most popular.

A jalapeno Stuft burger contains cream cheese, cheddar cheese and diced jalapenos. Or have it stuffed with macaroni and cheese or pulled pork.

All are served on a big, shiny griddled bun with crisp leaf lettuce and a thick slab of ripe tomato. The whole package is huge.

The Stuft Onion Ring is equally exciting. It’s a fresh-cut jumbo onion ring, the center of which is filled with ground beef and cheddar cheese. The whole thing is hand-breaded with a panko coating before being deep-fried and served with ranch.

Sandwiches are served with fries, but you may also get sweet potato fries topped with a drizzle of marshmallow sauce and a sprinkle of cinnamon or spicy buffalo tots. Cheesecake and or cobblers are offered for dessert.
