How is June already over!? This summer is moving crazy fast and I’m surprised I’ve even had time to think about dinner. The kids and I have been playing all day long with trips to the splash pad, pool, movies, and on and on. It’s been fun but I’m tired! Prepping food ahead of time has been saving my bacon lately. Here’s what we’ve been eating…

On the weekends I switch things up. I make more of an effort for breakfast and then we have pizza, takeout, leftovers, or easy dinners that require no thought or prep on my part. I also like to make a treat for the week ahead on Sunday nights.

WEEKEND-FRI, SAT, SUN
  • Banana Banana Bread – I’ve probably posted this recipe before because I make a new batch every other week and just keep them in the freezer for quick breakfasts and snacks.  I make mine in my mini loaf pan cooking them for only 30 minutes.
  • Snickerdoodles
