Cherry Dump Cake with Pineapple, Coconut, and Pecans

I’m just going to go ahead and say what everyone is thinking:

This is not the year for hard things.

There’s a time and a place for time-consuming desserts and recipes with multiple steps. But as we get closer to the end of the year, I have less and less energy for that.

It’s all about quick and easy for me these days.

I’m talking Banana Cream Pie Eclair Cake, Simple Baked Apples, Pumpkin Dip, and all the dump cakes.

Hand sprinkling chopped pecans on top of cake mix and coconut in a cake pan

This Cherry Pineapple Dump Cake is my current favorite. Cherry pie filling and crushed pineapple are topped with yellow cake mix and finished off with shredded coconut and chopped pecans.

The coconut and pecans get nice and toasted in the oven, giving a bit of a coconut macaroons vibe to the cake.

How to Make Cherry Pineapple Dump Cake

Here’s everything you’ll need to make this cake:

  • 1 can cherry pie filling
  • 1 can crushed pineapple in juice
  • 1 yellow cake mix
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup unsalted butter

To assemble the cake, spread the cherry pie filling into the bottom of a 13×9-inch cake pan and top it with the crushed pineapple with its juice.

If you don’t want to use canned cherry pie filling, you could always use homemade cherry pie filling instead!

Next, sprinkle the cake mix over the top, followed by the coconut and the chopped pecans.

Pour the melted butter over the top of the cake and pop the cake pan in the oven.

That’s right, you don’t need to mix anything before baking! You just dump everything in the pan and bake it. Thus the name.

In about an hour, you can have a delicious dessert that took you almost no energy to make. Just the kind of cake we all need right about now.
