This Spinach Lasagna Roll-Ups with Sausage recipe came about because I've got two meat lovers in our house.

With my husband and 10-year-old daughter? -- Don't even try to serve up a meatless meal.  In their mind if a dinner doesn't include meat, it's not dinner.

Sure, they love traditional spinach lasagna roll-ups where spinach plays the starring role all by itself.  But I better not serve them up as the main dish.  To them, spinach-alone lasagna roll-ups are a side dish fully intended to grace the plate alongside some baked chicken, roasted pork tenderloin, or a juicy grilled steak.

The addition of sausage to this classic veggie-based dish doesn't just satisfy my meat-loving family's definition of a main dish, it adds wonderful flavor to the spinach roll-ups, as well. 

So what's a dinner cook to do when she wants to enjoy some tasty spinach lasagna roll-ups without essentially making two main dishes? -- Add meat to the lasagna roll-ups, that's what.  And that's exactly how this sausage version came to be.

The addition of sausage to this classic veggie-based dish doesn't just satisfy my meat-loving family's definition of a main dish, it adds wonderful flavor to the spinach roll-ups, as well. Sausage and spinach pair wonderfully together, and sausage is quite tasty surrounded in the dish's creamy cheesiness, too.

Not only do these main dish lasagna roll-ups look impressive, they're pretty easy to whip up, too.  Much easier than they look, actually.

Start by boiling some lasagna noodles and preparing the cheesy sausage filling while they cook.

The filling for these Spinach Lasagna Roll-Ups with Sausage is a simple mixture of thawed frozen spinach, cooked bulk sausage, and ricotta, mozzarella, and Parmesan cheeses mixed with a couple of eggs to bind it all together.

Once the noodles are cooked, spread each noodle with about 1/3 to 1/2 cup of the filling mixture.

The lasagna noodles will be very hot, which can be a bit challenging to work with. While still in the colander from draining, I give them a quick rinse in cold water -- not to the point of completely cooling them down, but just a little rinse. 

This quick rinse in cold water makes them a bit easier to handle, and can also help keep the noodles from sticking together in the colander while they're waiting on their turn to be filled.

How to Make Spinach Lasagna Roll-Ups with Sausage Image

Roll up each filled noodle as you go and place them in a baking dish, seam side down.

Spoon some jarred meatless pasta sauce over the lasagna roll-ups.  And then bake them up for about 30 minutes.

Use any jarred pasta sauce you like for this recipe. Or, if you have a homemade marinara sauce you prefer, that works just fine, too!

I always just go with a jar of sauce for ease of prep.


Once these beauties are baked, you're ready to dig in and enjoy the cheesy deliciousness. Easy as can be!

Spinach Lasagna Roll-Ups with Sausage

Ingredients:

  • 12 uncooked lasagna noodles
  • 1 lb. bulk sausage
  • 2 eggs, lightly beaten
  • 1 (10 oz.) package frozen chopped spinach, thawed & squeezed dry
  • 2 1/2 c. whole-milk ricotta cheese
  • 2 1/2 c. shredded mozzarella cheese
  • 1/2 c. grated or shredded Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. ground nutmeg
  • 1 (24 oz.) jar meatless pasta sauce

Instructions:

  1. Cook lasagna noodles in salted water, according to package directions. Drain.
  2. While noodles cook, brown sausage in a saute pan breaking it into crumbles as it cooks; drain. Mix together eggs, spinach, ricotta, mozzarella, Parmesan, salt, pepper, and nutmeg in a mixing bowl. Stir in cooked sausage.
  3. Pour 1 cup pasta sauce in the bottom of a 9x13-inch baking dish.
  4. Spread 1/3 to 1/2 cup sausage mixture over each noodle. Roll up each noodle and place on top of sauce in the baking dish, seam side down.
  5. Spoon remaining sauce over roll-ups.
  6. Bake at 375℉, covered loosely with foil, for 20 minutes.
  7. Uncover, and bake an additional 10 minutes until heated through.
TRACEY'S NOTES:
  1. Use any jarred pasta sauce you like for this recipe. Or, if you have a homemade marinara sauce you prefer, that works just fine, too!
  2. The lasagna noodles will be VERY hot, which can be challenging to work with. While still in the colander from draining, I give them a quick rinse in cold water -- not to the point of completely cooling them down, but just a little rinse. This makes them a bit easier to handle, and can also help keep the noodles from sticking together in the colander.
  3. Be sure the spinach is very well-drained to keep the filling from being watery. 
  4. Covering the roll-ups during the first 20 minutes of baking keeps the noodles from drying out along the edges.
  5. If you'd like, sprinkle the roll-ups with a little more shredded mozzarella cheese prior to the last 10 minutes of baking for a melty cheesy topping.
