Green Bean Salad and Horseradish Dressing

It's summer, we all want fresh food, cool recipes, and a limited amount of time in the kitchen.

Loaves and Fishes is a food store in Sagaponack on the East End of Long Island that has been family owned since 1980 and specializes in fine prepared foods for takeaway. Anna Pump opened the store having loved food and its preparation since she was "tall enough to reach the stove and old enough to measure out ingredients for a cake". "I had always loved cooking. It simply was a way of life." Growing up on a 70-acre farm in northern Germany, she learned early the many sources and uses for crops and animals.

In 1985, Pump wrote The Loaves and Fishes Cookbook which I have owned and dog-eared for the better part of three decades. Pump's recipes are, for the most part, straight forward, flavorful, and made with in-season local ingredients. This green bean salad is indicative of how simple, yet original her recipes are. Refreshing complement to a summer barbecue.

Green Bean Salad with Horseradish Dressing
(6 servings)

2 pounds fresh green beans

Dressing
1 cup sour cream
½ cup freshly grated horseradish
¼ cup peeled and minced white onion
¾ teaspoon salt
¾ teaspoon freshly ground black pepper
⅓ cup chopped parsley

  • Blanch the green beans until crisp, then shock them under cool water. Allow the beans to cool.
  • Mix dressing ingredients together.
  • Pour this over the green beans in a salad bowl and serve at room temperature or chilled.
