Anna's Tomato Tart

It seems all I post about these days is food of some kind, but how can I not when the season is upon us and doesn't last very long.

Tomatoes!! There are farm fresh tomatoes, heirloom and "regular", everywhere and all I want to do is enjoy their incredible flavors. I'm searching for recipes that allow me to freeze some of this goodness so we can enjoy it over the winter, but when I saw this recipe, one to be enjoyed now, I had to make it.

Anna Pump was the founder of an incredible local food store called "Loaves and Fishes". I've shared one or two of the recipes from this store with you already. This one apparently originated with Anna but I found it through Ina (they were friends). Fresh local tomatoes, grated cheeses, minced basil, parsley and garlic, ..... and did I mention Dijon mustard. A friend joined Peter and me for our first taste of the tart at lunch one day recently, and I agree with her comment .... "I get a flavor, followed by another flavor, and then yet again another". Even reheated, a piece for an "on the fly" lunch one day this week, was delicious. Sure beats an American sandwich!
