These cruise ships won't make their debut until 2021 in wake of COVID-19

The Mardi Gras, which features a roller coaster on its top deck, was scheduled to begin sailing this fall. But due to the pandemic, it will now sail its maiden voyage in February.

The dining options aboard Carnival Mardi Gras include the first at-sea branch of Emeril's Bistro 1396, the namesake of New Orleans-bred celebrity chef Emeril Lagasse.

Royal Caribbean’s Odyssey of the Seas won't be complete until April 2021. The new ship features a two-level pool deck, including a sky ride that gives passengers a bird's-eye view.

The luxurious, all-suite, Polar-class Crystal Endeavor, which had cruises booked for March 2021, will sail not sail until later in 2021, reports USA TODAY partner CruiseCritic.com. The delay is due to the fact that ship construction was forced to stop due to the pandemic. When it does debut, Endeavor will explore the world with features that include two helicopters and a submersible.

Celebrity Cruises' new Apex will now begin sailing when the cruise line returns to service, currently scheduled to resume on Sept. 16. The ship features a Magic Carpet, a tennis court-sized platform that rides an orange track off the ship. The open-air platform attaches at several levels, providing views with cocktails or meals and doubling as an easy-off disembarkation venue.

Among the ship's most notable features: A 90-ton platform the size of a tennis court that is cantilevered over its side. Called the Magic Carpet, the platform moves up and down the side of the ship serving functions that range from a tender boarding platform to restaurant. Magic Carpet made its debut on Apex's sister ship, Edge, in 2018.

The Ritz-Carlton Yacht Collection had intended to debut its first ship, Evrima, in June. It will now begin sailing in April 2021.

The Ritz-Carlton is bringing its high-end hotel milieu to sea.

Evrima's 298 guests stay in 149 suites with balconies. Pictured here is the owner's suite, which features a large balcony, living room and dining area.
