Cancun Mexican Grill restaurant to open in Williamston

WILLIAMSTON - Owners of a popular Mexican restaurant franchise known for its colorful decor, fajitas and margaritas plan to open a new location in Williamston.

Cancun Mexican Grill will open its eighth location in a plaza off West Grand River Avenue, said Felipe Bernal, one of its owners.

The franchise got its start 15 years ago in a location off Central Park Drive in Okemos, he said.

Seven other locations have followed, including another in Okemos off Jolly Road.

Cancun Mexican Grill has seven restaurant locations, including this one in Delta Township. Plans to open an eighth eatery in Williamston are underway, said an owner.

Bernal said there's a demand for a location in Williamston.

"We have a good reputation, and customers came to us to ask for a location there," he said.

The restaurant will occupy approximately 3,500 square feet in a plaza at 725 W. Grand River Ave., Bernal said.

The location will offer the same menu featured at other Cancun Mexican Grill locations, he said, including fajitas, enchiladas, tacos, nachos, burritos and quesadillas, along with beer, margaritas and other drinks.

The restaurant will open sometime next year, Bernal said, but an opening date hasn't been set yet.

"Finishing the space could take five or six months," he said.

Bernal said the restaurant is expected to employ just under a dozen people after it opens.

Other Cancun Mexican Grill restaurants are located in Grand Ledge, Delta Township, St. Johns, Saline and Alma.
