Eggs an interesting case-study as dairy looks to build demand

A marketing consultant points to the resurgence of eggs as a reason to believe demand for dairy products has not peaked.

Story Arc Consulting president Steve Lerch says consumer preferences are constantly changing.

“I always look at eggs as an interesting case study. For decades, eggs struggled and had to fight this fight about cholesterol. They had to keep telling people they weren’t too high in the bad cholesterol, and this and that. And then you know what happened in like the early 2000’s? People kind of stopped caring about cholesterol.”

At the same time, he tells Brownfield people started to really care about protein.

“And I’m (speaking as) eggs. Did the best thing in the world just suddenly happen to me? Those trends happen, they come out of nowhere. As scary as it is to be in such an unpredictable space, it’s a blessing.”

Lerch says the dairy industry can help make those changes happen by paying attention to consumer trends, working with checkoff partners, and always striving to try something new.
