Ag Census gives insight into food preferences

The 2017 Ag Census shows farmers are adjusting to consumer preferences for some vegetables.

The largest change in acreage was seen in sweet potatoes, up nearly 40 percent from just five years before.  Romaine lettuce and spinach rounded out the top three crops to add the most acres. 

Ginseng, kale and fresh herbs represent the largest increase in percentage of growth, all near or above 100 percent of acres from the 2012 Census.

Sweet corn acreage declined the most, down by more than 13 percent, followed by snap beans, peas and potatoes.
