No one likes cookies more then I do.  Whenever I come across cake, donuts, pie, or ice cream I can easily pass it up without a second glance.  However, when it comes to cookies I have a hard time saying no.

I’m pretty picky when it comes to cookies because of how much I love them.  If I bite into a cookie and it isn’t good I’ll throw it away. I’m not out to eat an inferior cookie, especially when I make so many good ones but I’m always willing to try a cookie.

My favorite type of cookies are ones that are soft and delicious.  It’s hard to make a good soft cookie because sometimes they are under baked or they crumble because of how soft they are.  There’s a science to what the ingredients need to be and how long the cookie needs to bake for.

In the case of these sugar cookie bars the bars come out of the oven looking slightly under cooked but they finish cooking as they rest.  The cookie feels firm to the touch but is soft and melts in your mouth.  To top it off there’s a delicious buttercream frosting spread over the top!

The fun thing about these bars is that you can color the frosting for any occasion.  I made the frosting pink for Valentine’s Day but I could have made it green for St. Patrick’s Day or yellow for Easter.  The possibilities are endless!

I ended up taking these cookies to work and they were gobbled up quickly.  The cookies are rich, soft, and totally tasty.  I actually like putting them in the refrigerator to firm the cookie and the frosting up a bit.  Plus they taste really great cold.

Sugar Cookie Bars

Yield: 24 cookie bars

A soft and delicious sugar cookie topped off with buttercream frosting.

Ingredients

For the cookies:

  • 1 c. (2 sticks) butter
  • 2 c. sugar
  • 4 eggs
  • 1 Tablespoon vanilla
  • 5 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 c. sprinkles

For the frosting:

  • 1 c. (2 sticks) butter
  • 4 c. powdered sugar
  • 1 Tablespoon vanilla
  • pink food coloring

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a large bowl cream together the butter and sugar.
  3. Add in the eggs and vanilla and mix well.
  4. In a medium bowl combine the flour, baking soda, salt, and sprinkles. Mix well.
  5. Add the dry ingredients to the wet ingredients and mix well.
  6. Cover a cookie sheet with parchment paper and press the cookie dough into the pan.
  7. Bake for 15 minutes.
  8. Remove the pan from the oven and cool completely on a wire rack.
  9. To make the frosting place the butter in a large bowl and beat with a mixer until smooth. Add in the powdered sugar a half cup at a time until desired consistency is reached.
  10. Mix in the vanilla and pink food coloring.
  11. Spread the frosting over top of the cookies and add more sprinkles if desired. Cut into squares and serve.
