Tania’s Mexican Restaurant, Menallen Township

  • Facility is repackaging bulk dry ingredients (RICES) without properly labeling the contents.
  • Observed one Gallon of Apple Cider Stored beneath Ice inside of Bulk Ice Machine located in Main Kitchen. (Corrected)
  • Observed food container being used as a scoop inside of flour bin and did not have a handle on it.
  • Observed Milk, cheeses and meats was held between 45-50 °F, in the Trille Cold Holding Unit Located on Sales Floor rather than 41°F or below as required. (Correcte, TCS foods were discarded)
  • Observed a can of raid stored with food and food equipment located in the back storage room of the facility which is a restricted use of pesticides and does not meet the requirements specified in the Code of Federal Regulations. Observed "Roach Killer" stored in back of kitchen which is a restricted use of pesticides and does not meet the requirements specified in the Code of Federal Regulations.
  • Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility. (Corrected, provided procedures)
  • Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in cold holding units located throughout facility.
  • Food facility is not removing dead roach like insects frequently, as evidenced by old / decaying roach like insect bodies, approximately 6-7 throughout facility on floors.
  • An open employee's beverage container (coffee) was observed on the prep table where Female Employee was dicing up onions which is a food preparation area. (Corrected)
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. (PH)
  • Observed Trille Cold Holding Unit located on consumer sales floor to have an ambient temperature of 51. degrees and could not support the internal temperatures of 41. degrees or below required for the TCS foods contained inside of it to remain in temperature.
  • Observed Sticker residue on numerous food containers throughout food facility stacked on top of one another and used to hold food.
  • Observed Tongs being utilized for consumer self-serve at baked goods unit which had old food residue and crust on it and was not clean to sight and touch. (Corrected)
  • Observed bulk Ice Machine to have black/brown slime like residue on the deflector plate and was not clean to sight and touch.
  • Observed numerous dishes, pots and pan's stored on storage racks with clean food equipment.
  • Observed Slush Machines located on front counter to have black/brown mold like residue inside of the container and was not clean to sight and touch.
  • The food facility does not have the original certificate for the certified food employee posted in public view.
  • Old food residue was observed in the handwash sink located in main kitchen area, indicating uses other than handwashing. (Corrected)
  • Old unused equipment (freezer and grill) stored in basement area, should be removed from food facility.
  • Observed 3-4 dying roach like insects in the basement of food facility indicating potential harborage of roach like insects.
  • Floors throughout the food facility are extremely dirty, dusty, and in need of cleaning.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed raw shell eggs stored directly above ready to eat produce and on the same shelf as produce (Heads of Lettuce) and tortilla bread. (Corrected)
  • Observed raw Chorizo meat and bacon stored directly over ready to eat produce in the Trille Cold Holding Unit Located on the Sales Floor. (Corrected and provided handout on proper food storage of raw meats) 
  • Observed two yellow mop buckets containing black murky water which were not properly disposed of according to regulations.
  • Observed door located in the back (receiving) area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.
