Didi's Supper Club now open in Pewaukee's renamed and renovated Ingleside Hotel

The steaks and pot roast are among the most popular items at Didi's Supper Club.

When the former Country Springs Hotel along Interstate 94 in Waukesha went into a period of changing ownership, names and $14 million in renovations, there were plenty of alterations to go along with it.

One of those changes is the opening of Didi’s Supper Club.

With Waukesha Hospitality now owning the Ingleside Hotel via Burwell Enterprises, the hotel’s former Copper’s Pub and Wildflowers Restaurant were revamped to create the hotel’s new eatery.

“We have our local crowd that comes in here and really enjoys it. We have quite a following in the area. When people have come in, they’ve seen how beautiful the changes are and how nice the new environment is,” said Tiffany Woodward, director of marketing for both Didi’s and the hotel. “We’re happy with the response from both the community and our hotel guests.”

The $14 million in renovations at the Ingleside Hotel, formerly known as the Country Springs Hotel, included the opening of Didi's Supper Club.

Didi’s gets its name from a suggestion from the Burwell family, whose children were cared for by Didi Kimpling during their youths.

“They decided to name it after her, and she actually didn’t know until the ribbon-cutting. It was a surprise,” Woodward said.

Although they have now grown up, the Burwell children remain close to Didi. Even some elements of the decor have been inspired by her.

“When you come in, you’re going to see pieces of things that were important to Didi,” Woodward said. “The neon sign is magenta; magenta is her favorite color.”

A ribbon-cutting ceremony was held for Didi's Sept. 10 with guests including (from left) Waukesha County Executive Paul Farrow, Secretary of the Wisconsin Department of Tourism Stephanie Klett, Barbara Burwell, Michael Burwell, Peter Burwell, Blake Burwell, Didi Kimpling, Regional Director for Sen. Didi’s officially opened in September, and the restaurant has already established a strong following.

“Our location, in general, is known for outstanding food quality. We use a lot of local vendors and local ingredients,” Woodward said.

The efforts have been led by Ingleside food and beverage director Jerry Kruesel.

Didi’s is open for breakfast, lunch and dinner with separate menus for each. Favorites for lunch include the Asian chicken salad, flatbreads and turkey wrap, while the most popular dinner items live up to the supper club identity.

“For dinner, one of the really popular starters (is) the crab-stuffed mushrooms. A lot of people like the seafood mac and cheese,” Woodward said. “Obviously the steaks and pot roast are big ones, and the salmon filet has been a big one as well.”

The dinner menu at Didi's includes a variety of pasta options. The restaurant is also open for breakfast and lunch.

While Didi’s influence has led to the name and decor of the new supper club, Woodward noted that it will also even reach the menu in the future.

“We are looking forward to incorporating some of Didi’s favorite homemade recipes on the menu in the near future. I know those are coming,” Woodward said. “There’s going to be a section on the menu that is for her and her homemade meals. I think the pot roast might change a little bit based on how she made it.”
