Seven Eleven No. 28214B, New Oxford

  • Water, as observed at hand-washing sink, is not under pressure during inspection.
  • Consumer microwave unit located near condiments has old food residue and splatter on interior ceiling and is not clean to sight and touch.
  • Soda dispenser nozzles as well as on the under ceiling where nozzles are located and were not clean to sight and touch.
  • The person in charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed excessive dust and dirt accumulation on beverage sliders located in the walk-in cooler.
  • Food facility has an employee who held a Certified Food Manager certificate: however, the certificate has expired and is no longer valid. (Facility has 10 days to enroll in an accredited food safety program recognized by the Commonwealth of Pennsylvania).
  • The hand-wash sink located behind the counter near the hot dog/tornado roller area does not have water at a temperature of at least 100 F.
  • Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility (Corrected procedures provided).
  • The food facility does not maintain Food Employee Certificate records as required. (Facility has 10 days to enroll in an accredited food safety program recognized by the Commonwealth of Pennsylvania).
  • Observed heavy amounts of static dust and dirt accumulation on the fan guards located in the walk-in cooler.

Christine’s Café, Gettysburg

  • The person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility.
  • The food facility does not maintain Food Employee Certificate records as required. (Facility has 10 days to enroll in an accredited food safety program recognized by the Commonwealth of Pennsylvania).
  • Food facility has an employee who held a Certified Food Manager certificate, however, the certificate has expired and is no longer valid. (Facility has 10 days to enroll in an accredited food safety program recognized by the Commonwealth of Pennsylvania).
  • Hollandaise sauce, located in two-door refrigerator was not cooled from 135 F to 70 F in 2 hours and/or from 135 F to 41 F within 6 hours, after preparation. (Food discarded).
  • Sauerkraut and sliced banana peppers refrigerated, ready to eat time temperature control for safety foods in the bain-marie unit, was date-marked by the facility, but was beyond the 7-day use or sell by date and requires discarding. (Corrected food discarded).
  • Observed deflector plate of bulk ice machine to have an accumulation of black and brown mold like substance and was not clean to sight and touch.
  • Dishwasher observed changing tasks from (dirty to clean dishes) that may have contaminated hands without a proper hand wash in-between. (Corrected, provided education to all employees).
  • Orange juice requiring refrigeration as per label was held at 50.2 F, rather than 41 F or below as required. (Corrected juice discarded).
  • Milk, was held at 52.3 F, rather than 41 F or below as required. (Corrected milk discarded).
  • Cooling unit located on the dining room floor containing TCS foods was found to have an ambient temperature of 55.4 F which did not maintain proper internal temperatures of those foods.
  • Observed significant amounts of condensation leaking from the walk-in cooler located in the basement and pooling on the floor of the unit which is not in good repair.
  • The food facility does not have the original certificate for the certified food employee posted in public view.
  • Observed personal medicine (ibuprofen) stored on the same shelf with food equipment and where food preparation taken place in the kitchen. (Corrected)
  • Thermometers for ensuring proper food temperatures are not calibrated and/or functioning properly located in the cooling unit located on the dining room floor.
  • Observed static dust, dirt and grease accumulation on the filters of the hood vent system.

A call to the restaurant was not immediately returned.

June 15

Park Hotel Inc., New Oxford

  • The person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility (Corrected procedures provided).
  • Observed rust, dust, dirt and food debris on the bottoms of the one door freezer and the one door refrigerator located in the kitchen.
  • Observed suppression lines over the stove and grill to have excessive amounts of static dust, dirt and grease accumulation.
  • The Food facility does not maintain Food Employee Certificate records as required. Facility has 10 days to enroll in an accredited food safety program recognized by the Commonwealth of Pennsylvania.
  • No sign or poster posted at the hand-wash sinks in the restroom areas to remind food employees to wash their hands.
  • Mops are not being hung to air dry.
  • Chicken salad and ham salads in storage containers, located in bain-marie is not labeled with the common name of the food.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. (QUAT)
  • The food facility does not have the original certificate for the certified food employee posted in public view. Facility has 10 days to enroll in an accredited food safety program recognized by the Commonwealth of Pennsylvania.
  • Women’s toilet room is not provided with a covered waste receptacle for sanitary napkins.
  • Mops are stored beside prep area in kitchen, with potential to contaminate food equipment and utensils.
  • Hand-washing sinks/toilets/urinals are not being cleaned as often as necessary to keep them clean in men’s room.
  • Observed two heads of lettuce and mayonnaise in the bain-marie area, slimy to the touch/spoiled/moldy and is adulterated. (Corrected food discarded).
  • Observed cream of corn, and baked beans in the walk-in cooler, slimy to the touch/spoiled/moldy and is adulterated. (Corrected).
  • Observed eggs held at 51.1 F, in the bain-marie, rather than 45 F or below as required. (Corrected eggs discarded).
  • Cheese, mayonnaise, tomatoes, butter and bacon was held between 52.8 F – 71 F, in the bain-marie unit located in the kitchenette area, rather than 41 F or below as required. (Corrected all TSC foods were discarded).
  • Observed ambient temperature of bain-marie containing TSC foods to be 68.9 F and not in good repair to maintain required internal temperatures of potentially hazardous foods.
  • Observed excessive amounts of condensation pooling at the bottom of two of the beer coolers located in the bar.
  • Observed excessive dirt and grime at least 1 inch thick on drain pipes of three basin sink. Observed excessive dirt and dust on the floors throughout the facility.
  • Filters of hood system have excessive dust, dirt, grease and black char accumulation.
  • Observed personal medication stored in kitchen, a food prep area, beside food  equipment and food. (Corrected).
  • Multiple foods throughout kitchen in walk-in cooler and the bain-marie stored open with no covering.
  • Observed several TSC foods (baked beans, pastas, gravy’s, cooked meats, chicken corn soup) all refrigerated ready to eat food prepared in the food facility and held for more than 24 hrs, located in the walk-in cooler and bain-marie unit, is not being date marked. (Corrected).
  • The hand-wash sink in the kitchen area was blocked by papers, dishes and personal medications and not accessible at all times for employee use. (Corrected).
