Rebranded York restaurant set to open

A popular downtown York restaurant known for its barbecue will be getting a revamp and a new name.

Over the next few weeks, Baron Von Schwein will begin a multi-week rebranding effort that includes changes to the restaurant and dining format, said owner Jordan Pfautz.

During the rebranding, the restaurant will change its name to Roost Uncommon Kitchen.

"Roost isn't derived from rooster, it's derived from a place to come home to," Pfautz said.

Baron Von Schwein will still have its Lancaster-based food truck that will be run by Pfautz's former business partner.

The York brick-and-mortar restaurant, owned by Pfautz, is already offering brunch on Sundays, but the revamp will introduce a new focus: breakfast and lunch.

"We saw a big hole in the market for breakfast — especially for a higher end breakfast at a place where you can hang out and have breakfast meetings," Pfautz said.

About 50 percent of the menu will be rotating specials but much of the core menu will be comprised of favorites like the Smashmac Burger and the Porkstrami Reuben, Pfautz said. Some of the Baron staples, including smoked meats, some side dishes and some sauces, will remain on the menu, Pfautz said.

It’s the physical restaurant that will see the most change.

A new hood vent will be installed to allow for more equipment, the kitchen will be closed off and bench seating will be installed, Pfautz said.

Diners will order their food at the counter like before, but instead of waiting by the counter for food, waiters will bring the orders to the tables.

While the restaurant undergoes changes, it will close for periods of time, starting this Sunday to Tuesday. After a couple of small projects are completed in the next few weeks, Pfautz said the restaurant will close for two weeks before the rebranding is complete.

Updates on when the restaurant closes will be given through the current Baron Von Schwein page, which Pfautz said will also be rebranded to Roost in the near future.

When Roost opens, the restaurant’s hours will be 7 a.m. to 3 p.m. Monday through Thursday, 7 a.m. to 7 p.m. Friday and Saturday and 10 a.m. to 2 p.m. Sunday.
