In Utah temperatures have been very hot for weeks now, so this Greek Cabbage Salad really sounds good! Not only does the salad have plenty of creamy Feta cheese to add flavor, but absolutely no cooking is involved in this tasty low-carb cabbage salad with Greek flavors. And when we updated this recipe with new photos, we couldn’t resist adding some spicy Greek Peperoncini to up the flavor as well!

We also tried it with oregano, but some of our taste testers weren’t wild about the strong flavor of fresh oregano, so I’m giving you the original version with only fresh thyme. But if you’re an oregano fan go ahead and use a tiny bit of chopped fresh oregano as well.

We loved this with fresh thyme from the herb garden, but if you don’t have any of that I’d use some dried thyme mixed into the dressing. And of course I’m crazy over cabbage, and I love pretty much everything with Feta, so it’s no surprise I would be a huge fan of this cabbage salad with Feta.

PIN the grilled chicken kabobs to try them later!

Grilled Chicken Kabobs with Vegetables are a favorite dinner I used to make when I catered houseboat trips on beautiful Lake Powell in Southern Utah. These skewers with chicken and vegetables were always a hit on the houseboat. The kabobs are made with a flavorful marinade using dried herbs and other ingredients you probably have on hand.

For years this recipe was in the archives with a photo that wasn’t really showing off how delicious the chicken kabobs are. So I’m happy to have improved photos for this chicken kabob meal!

This recipe is perfect for an inexpensive summer dinner that’s sure to impress; I hope you enjoy making them! And the leftover chicken and veggies is delicious reheated, so if you have enough skewers I wouldn’t hesitate to double the recipe to have leftovers!

PIN Bacon Cheeseburger Meatballs to try them later!

Like many Americans, I grew up thinking there was nothing else with quite the comfort food appeal as bacon cheeseburgers. So when the idea for these Bacon Cheeseburger Meatballs popped into my mind, I had to try it, even if this isn’t quite the kind of healthy food I try to focus on!

I had to make it with both Kara and Jake to get a version I wanted to share with you. But the keeper recipe in this post has all the flavors I love in bacon cheeseburgers. And that includes dill pickles and burger sauce in addition to the beef, bacon, and cheese!

I will confess that these are a little tricky to make, with the hardest part being tucking the bits of cheese inside the meatballs before you put them on the grill. And some cheese will ooze out, so you want to cook them on a grilling pan (affiliate link) like the one I used to help cut down on the mess.

But the Bacon Cheeseburger Meatballs are so delicious! And it’s prime grilling season, so I thought these meatballs would be the perfect recipe to feature for Friday Favorites this week. If you’re someone who likes these flavors, please give them a try!

This Tuna Avocado Tomato Salad is just the kind of main-dish salad that sounds good to me when it’s really hot outside. This is a salad that started as a lunch inspired by the need to use up some cilantro. But I added juicy cherry tomatoes, avocado, tuna packed in olive oil, and a dressing with lime juice to make a salad recipe I’m sure I’ll be making over and over.

And if you’re growing tomatoes and having a cherry tomato explosion at your house, this salad is a delicious way to use them. And it’s also just as tasty with cherry tomatoes from the store! I hope you try this perfect lunch salad soon!

Greek Dip with Tomatoes and Feta is a recipe I first got from my former trainer Wendy when I needed an appetizer for a party. Wendy raved about how much everyone loved her favorite dip that was easy to make! So when I went to my car after the workout, I quickly wrote the ingredients for Greek Dip on a piece of paper.

And at the party, the Greek Dip that Wendy shared with me was a HUGE hit! In fact on a big table covered with more food than you can imagine, my dip was completely devoured in a few hours.

I used heirloom tomatoes, but Wendy assured me that even if you make this with cherry tomatoes, it will always be delicious. And right now it’s prime tomato season, so I’m reminding you about this amazing Greek Dip! I bet you’ll make it over and over once you try it!

PIN Easy Cheesy Zucchini Bake to try it later!

August 8 is national “Sneak Some Zucchini onto Your Neighbor’s Porch Day!” And for everyone who’s giving away zucchini or hoping to get some, I’m reminding you about this Easy Cheesy Zucchini Bake. This has been the most popular zucchini recipe on my blog for years! Every summer I wonder if the recipe will still be popular, and then I notice people are starting to visit it again. Have you tried this recipe that’s the number one recipe out of The Top Ten Low-Carb Zucchini Recipes on my blog?

It was my sister Pam who originally found the inspiring recipe (in 2011!) Pam changed the recipe a bit when she made it, and I changed it a bit more when I tried it. Pam and I were both impressed with how this idea of tossing zucchini with a few fresh and dried herbs and cheese and then baking it produced a cheesy zucchini bake that’s so delicious.

I’ll be honest, I did make it a little cheesier than the original recipe! And we used a very generous amount of sliced basil. The other change I made was to use a larger casserole dish that was 8 inches x 11 inches. I really like how this larger dish lets the zucchini spread out more so every piece of zucchini gets covered with cheese!

This recipe is probably already a favorite for many of you. But for newer readers who haven’t tried it, I hope you make this favorite popular side dish the next tune you get zucchini from the garden or the farmers market!
