Easy Air Fryer Roasted Beets with Feta
This healthy side dish which combines the earthy flavor of simply seasoned beets with the creamy richness of feta cheese is one of our favorites!

Ingredients

pound
beets, washed, peeled and cut into 1-inch chunks
▢

tablespoon
olive oil
▢
¼
teaspoon
fine sea salt
▢

pinch
black pepper
▢
¼
cup
crumbled feta cheese
▢
1
teaspoon
dried oregano
Instructions
Preheat air fryer to 400F degrees for 5 minutes.
In a medium bowl, toss the beets with olive oil, salt and pepper.
Add the beets in a single layer to basket of preheated air fryer. Air fry for 8 minutes.
Remove the basket from air fryer and carefully toss the beets. Continue cooking for 5 to 7 minutes, until lightly browned and crispy.
Once beets reach desired level of crispiness, add them to a serving bowl and sprinkle with feta crumbles and oregano.
Serve immediately.
Leftover beets can be store in an airtight container in the refrigerator.
