Easter is less than a month away. Can you believe it? Less than a month. Where does the time go? I tell you where it goes. Sitting in meeting after meeting after meeting.

Now, I know I haven’t truly vented about work like I have in the past. But I have just got to get a few things off my chest. Bear with me. This should take too long, and we can get back to this delicious croissant breakfast casserole.

I wouldn’t mind all the meetings if they were on time and on topic. I was in a meeting this week, that I did not request, that I felt was a total waste of my time. I’m supposed to transfer some responsibilities I have to a person who has returned to the team. She’s done and said a lot to me to try to get out of doing these tasks every week. She drags her feet and takes her time.

Case in point. She scheduled a meeting to go over the SOP for a process I created. I know I wrote one but for the life of me cannot find it. It was an hour-long meeting. First, she was late. Second, not only was she late but it took forever for her to pull up the Excel and Word documents. When I schedule a meeting where technology is needed, I arrive early and pull everything up so we’re ready go when th meeting starts.

About 20 minutes into the meeting, she stars on this tangent about Orange Theory fitness and how she was a member but will cancelling her membership. In detail and repeated her story at least once. Parts of it at least twice. Look, I’m sorry you had issues with them, but I really don’t. And I really don’t want you to waste MY time talking about it. I didn’t ask and I don’t care.

20 minutes of my life vanished. I can’t get that back. And we didn’t finish the task the hour-long meeting was supposed to accomplish. And this isn’t the first time this has happened. There was another meeting with another attendee where they chatted about going to Peru and cheap traveling sites. It’s fine if it’s small talk while we’re waiting for something to come up, but it wasn’t that.

Every meeting is late. Every meeting runs over it’s assigned time. And almost every meeting is never o topic and requires like 20 minutes or so of off topic conversation. Being a contractor is stressing me out because of this. Thankfully, I see the light at the end of the tunnel. I just hope it leads somewhere and doesn’t go out.

Okay. Rant over. Until the next one about COVID-19 which will probably be in a few days. That’s a whole other round of meetings where people are just stupid and refuse to educate themselves.

Thankfully, last week I seemed to be on my game and was ahead of dinners. Unprecedented! Well, minus the Thursday dinner. That was just a total brain fart. But the rest of the week was pretty good.

Monday was a delicious garlic Tuscan chicken. It was super easy to whip up and throw into the pressure cooker. Some sun-dried tomatoes, canned tomatoes, chicken thighs, herbs, and spices and some wine. Let it cook up and serve it over some delicious rice.

Then Tuesday morning I prepped this casserole.

That’s how easy this overnight breakfast croissant casserole is. So, technically I didn’t let it sit overnight, but it did sit in the fridge at least 8 hours. I wanted to make sure the croissants absorbed all the delicious egginess to turn them into a scrumptious custard type consistency in this breakfast casserole.

Since I prepped the casserole and had time to wait while it baked, I prepared the lamb meatballs for the sandwiches. I had them all formed, on the plate, and refrigerated ready for me to sauté on the stove for Wednesday dinner. And those sandwiches were delicious! I will have to create one and share it. So, I can eat them again. They tasted so delicious.

And this overnight croissant breakfast casserole is totally delicious. It’s so simple but full of so much egg, cheese, sausage, and croissant flavor it’s not even funny. I totally DEVOURED a large piece of this for dinner. The sweet croissants were custard like and delicious. The sausage and cheese tasted so good. This is one hearty and delicious breakfast casserole.

And did I mention you can make it ahead of time?

Heck yeah! This is even better the longer it sits in the fridge. The croissants absorb so much egg goodness. The longer it sits the more custard like it gets. And you want this to be so custardy delicious! With some flecks of sausage and cheese which adds to the yummy goodness that is this overnight breakfast casserole.

Prep Time: 5 minutes
Cook Time: 50 minutes
Additional Time: 3 minutes
Total Time: 58 minutes

Overnight Croissant Breakfast Casserole has just a few ingredients, comes together easily, can be made ahead, and TASTES AWESOME!

Ingredients

  • 2 cups croissant pieces (about 5 average size torn into pieces)
  • 1 cup chopped, cooked turkey breakfast sausage
  • 1 1/2 cups shredded cheddar cheese
  • 6 large eggs (1 1/2 cups)
  • 1/4 cup heavy cream
  • 1/4 cup milk (or all heavy cream or all milk)
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon black pepper

Instructions

    1. Combine the croissant pieces with the sausage and cheese in a mixing bowl. Pour the mixture into an 8” x 8” casserole dish coated with cooking spray.
    2. Using the same bowl, combine the remaining ingredients and stir with a whisk.
    3. Pour the egg mixture over the croissant mixture. Press the croissants into the egg mixture, cover with plastic wrap, and refrigerate at least 3 hours but overnight is best.
    4. Preheat oven to 350.
    5. Remove the casserole 30 minutes before putting it in the oven.
    6. Cover with aluminum foil, place the casserole dish on a sheet plan, and bake for 30 minutes.
    7. Remove the foil and bake an additional 15 to 20 minutes or until the casserole is golden brown and the eggs are set in the center.
    8. Allow to rest 5 minutes before slicing and serving.

  1. Meetings are the #1 reason I left the corporate world. UGH! so much of my life wasted.

    I love overnight casseroles like this. And the croissants would be a big hit with my crowd.
