Copycat Cracker Barrel Broccoli Cheese Casserole is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring cauliflower or broccoli recipes. Glad you could join us!

For my offering I decided to make Broccoli and Cheddar Casserole with rice. Which is a Cracker Barrel Copycat recipe. It’s no small secret that I love eating this. But they don’t always have it on the menu. Since they often change it out seasonally. Usually about the time I want it they won’t have it. So then I have to make it for myself.
I also have the sister recipe to this one posted. Which is the Broccoli Cheddar Chicken Casserole. It is a lot like this casserole. Except it has chicken instead of the rice. I imagine you can hide some chicken in the casserole if you want both and want to do just one pan. At other times you might just want a side dish, such as sides for Thanksgiving when everyone will be eating turkey or some such.

Copycat Cracker Barrel Broccoli Cheese Casserole
Equipment
- Oblong casserole dish (lasagna pan)
Ingredients
- 12 ounces evaporated milk
- 10 ounces fresh broccoli florets
- 2 cups uncooked Instant rice
- 2 cups chicken broth
- 1 teaspoon minced garlic
- 1/2 teaspoon black pepper
- 10-3/4 ounce can condensed cream of chicken soup undiluted
- 10-3/4 ounce can condensed cheddar cheese soup undiluted
- 6 tablespoons melted butter
- 36 Ritz crackers crushed 3 small packs
- 12 ounces white cheddar and Parmesan blend cheese shredded
Instructions
- Preheat oven to 350F.
- Simmer broccoli in evaporated milk until tender (about 10-15 minutes).
- Add broccoli with milk into a mixing bowl, stirring it up with uncooked rice, broth, garlic, pepper, and condensed soups.
- Place in an oblong casserole dish sprayed with nonstick spray.
- Top with shredded cheese.
- Toss crushed crackers with butter and sprinkle over the top.
- Bake for 25 minutes or until hot.
