Make-Ahead Breakfast Casserole

This Make-Ahead Sausage Breakfast Casserole is a family favorite. Sausage, cheddar cheese, swiss cheese, and bread cubes baked in eggs. YUM! I love that I can make this casserole the night before and pop it in the oven when I wake up in the morning! PERFECT for overnight guests and hectic weekday mornings. While this is called a breakfast casserole, we love to eat this for dinner. No matter when you eat this, you MUST eat this!! SO good!

How to Make Sausage Breakfast Casserole

This casserole is super easy to make with only a few simple ingredients. In a large skillet, cook breakfast sausage over medium-high heat until crumbled and no longer pink. Drain excess grease. Cut or tear bread slices into small pieces. Place the bread cubes into the bottom of a baking dish. Add cooked sausage and shredded cheese to the dish.In a large bowl, whisk together milk, eggs, Dijon mustard, Worcestershire sauce, salt, and pepper. Pour the egg mixture over the sausage mixture. Cover the baking dish with aluminum foil or plastic wrap. Place the dish in the fridge and refrigerate overnight. Remove the pan from the oven, and bake uncovered until the eggs are set.

  • What kind of sausage for a breakfast casserole? I use Jimmy Dean sausage. You can use any brand or flavor of breakfast sausage in this recipe.
    • Can substitute turkey sausage for a lower calorie option.
  • I used Sunbeam sandwich bread for the bread cubes in this casserole. You can use any leftover bread that you have on hand. This would be super delicious with some sourdough bread slices.
  • You can use any cheeses that you enjoy. Pepper jack, Colby jack, gouda, and mozzarella are all delicious!
  • This is a great base recipe. Feel free to add some vegetables to the casserole. Bell peppers, onion, mushrooms, red bell pepper are all great. 
  • Can you freeze sausage breakfast casserole? Yes! Bake the casserole and cool completely. Cover the pan with plastic wrap and aluminum foil and freeze. To reheat, thaw and reheat covered in the oven or in the microwave.
  • Store leftovers in an airtight container in the refrigerator.

What to Serve with Breakfast Casserole

This has quickly become one of our favorite recipes. We love the combination of swiss and cheddar cheese. This casserole is great for overnight guests, brunch, lunch, and dinner! We like to serve this with some fruit, muffins, and some hash browns. This is also great topped with a little salsa and avocado for a southwestern flair. Give this casserole a try ASAP! It is sure to become a family favorite.

Instructions:

  • Lightly spray an 11×7-inch or 9-inch baking pan with cooking spray. Set aside.
  • Cook sausage in a large skillet until no longer pink. Drain well.
  • Arrange bread in a single layer in prepared pan. Top with sausage and cheeses.
  • Whisk together milk, eggs, dijon mustard, Worcestershire, salt and pepper. Pour over sausage and cheese.
  • Cover and refrigerate for 8 to 24 hours.
  • Preheat oven to 350ºF. Bake casserole uncovered for 55 to 65 minutes.
