Yesterday was an absolutely gorgeous day in the Lehigh Valley. The spring weather compelled us to spend the majority of the day outside soaking up the sunshine. The whole family, including Monty, piled into the car and headed over to Bethlehem's South Side so Stephen and I could get crepes and coffee for brunch. Afterwards, we walked Caroline along the South Bethlehem Greenway and then up through Lehigh University's campus.

Caroline was exhausted by the time we got home (we may have over-stimulated her just a bit...), but I'm glad that we made the decision to get out. She's too young to remember everything we did on our first outing as a family of three, but I know I'll remember the day forever.

Wednesday: Stephen's Choice

Thursday: Apricot-Jalapeno Chicken with Sesame Noodles from Quick Fix Meals

Friday: Pizza with Spinach and Caramelized Onions

Saturday: Healthier Eggplant Parmesan
