I am not someone who sits down and eats a big breakfast every morning.  I’m more of the person who grabs something quick, filling, and delicious.   I often choose Quaker® Oatmeal Squares  as a good start to my morning.   My husband is more of the Quaker® Real Medleys® or Quaker® Life type of guy.   Regardless, we both enjoy Quaker® wholesome cereals in the morning as a quick and easy breakfast idea.  I also like to pack a baggie filled with Quaker® Simply Granola and dried fruit in my backpack in the morning so I can have a snack mid-morning at school or to help fuel me at aerobics after school.Delicious and crispy Buffalo Ranch Chicken Tenders

 

But have you ever used your breakfast cereal in a lunch or dinner recipe?   When I was young my mother worked during the day and my dad worked at night.  That meant my dad was home during the day and spent a lot of quality time with my brother and I.   One thing he enjoyed doing was cooking and I enjoyed hanging out in the kitchen while he cooked.   He had a signature dish that he called Chicken ala Fig (because of our last name) and while I’m not sure of the actual ingredients, I know he used cereal to coat the chicken.   It was an awesome lunch that I loved as a kid but haven’t had it since.

I wanted to recreate that delicious chicken recipe but also put my own spin on it.   So when I went to Walmart I grabbed a package of chicken then headed over to the cereal aisle.   I wasn’t sure what type of cereal my dad used but I decided on Quaker® Life cereal since it’s a cereal I know and trust.   After I had those two main ingredients I went to find some buffalo sauce to toss the chicken fingers with.   But I wasn’t finished yet.  In my head I had these awesome chicken fingers and I knew I needed some ranch seasoning to complete the dish.Creating Buffalo Ranch Chicken Tenders

When I got home I crushed up the Quaker® Life cereal and mixed it with the ranch seasoning.   I coated the chicken with the mixture and fried it in a skillet.  After it was completely cooked I tossed it with the buffalo sauce.   I placed a few Buffalo Ranch Chicken Tenders on each plate and served it with a side of ranch dipping sauce.   The tenders were super crispy, had a hint of sweetness from the cereal which was awesome with the spicy buffalo, and had a kick of ranch as well.   It was the perfect recreation of my dad’s recipe with a little added flavor.

Spicy buffalo chicken tenders coated in a crispy ranch and Quaker® Life cereal coating.

Ingredients

  • 1 lb. boneless skinless chicken tenders
  • 2 eggs beaten
  • 1 1/2 c. Quaker® Life cereal
  • 1 packet ranch dressing mix
  • 2 T. olive oil
  • 1/4 c. buffalo sauce
  • 3 garlic cloves
  • 1/4 c. ranch dressing

Instructions

  • Place the eggs in a shallow dish. Set aside.
  • Place the Quaker® Life cereal in a zip top baggie. Crush the cereal with the palm of your hand or with a small mallet.
  • Pour the cereal crumbs into another shallow dish along with the ranch dressing mix and toss to combine.
  • Place the olive oil in a large skillet. Heat over medium heat.
  • Dip each chicken tender into the eggs and then coat with the ranch cereal mixture. Place the chicken tenders in the skillet and cook for 5-7 minutes per side or until browned and cooked through.
  • Once the chicken is cooked through combine the buffalo sauce and garlic cloves and pour into the skillet. Heat the chicken and buffalo sauce for 2-3 minutes or until the tenders are coated.
  • Remove from skillet and serve with ranch dressing.

  1. Hmmm, sounds like a good idea! I love LIFE cereal. Get it fairly regularly (though, the cinammon kind). I might have to give this a whirl. Sounds like something we’d enjoy.
