Never run out the door hungry and empty handed again! Instead, get a healthy serving of fiber, protein, and flavor from these quinoa muffin bites. This recipe is also extremely versatile. We suggest mixing up the veggies and adding some fruit for added variety and a sweet note. Serve with a dip like Greek yogurt with garlic and dill or eat ’em plain.

Ingredients

  • 1/4 cup red quinoa
  • 1/2 cup white quinoa
  • 1 1/2cups water
  • 1cup chopped broccoli
  • 1/4cup diced shallots
  • 1/4cup grated carrot
  • 1scallion, chopped
  • 1long green pepper, chopped
  • 2eggs, lightly beaten
  • 1 tablespoon grainy mustard
  • Salt
  • Pepper
  • Sweet paprika
  • Cooking spray

Directions

  1. Preheat oven to 375 degrees.
  2. In a small pot over high heat, bring red and white quinoa and water to a boil. Reduce heat, cover, and simmer until quinoa is light and fluffy, about 15 minutes. Set aside to cool.
  3. Place cooled quinoa in a bowl. Add remaining ingredients, including salt, pepper, and paprika to taste, and fold until evenly combined. Lighlty grease a mini-muffin pan with cooking spray. Scoop mixture into pan.
  4. Bake for 20 to 25 minutes, or until tops are slightly browned and bites hold together.
