Asian Chicken Wings from The Buffet.

Jean M., Milwaukee, requested the recipe for Korean Sauce Chicken Wings served at The Buffet at Potawatomi Bingo Casino.

She wrote: “My parents and I love the buffet at Potawatomi because all the food is delicious. But the Korean chicken wings are a star at the Asian Station at the buffet.

Peter Kandziora, head chef at The Buffet, said although the Korean-style wings are no longer being served, he is happy to share a similar recipe that is also very popular called Asian Chicken Wings.

Potawatomi Buffet Asian Chicken Wings

Makes 12 wings

  • 1 cup soy sauce
  • 1 cup water
  • 1 cup sugar
  • 3 tablespoons sambal oleck (Asian chili paste, available at Asian markets and some grocery stores)
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped fresh ginger
  • 1 tablespoon sesame oil
  • 4 teaspoons cornstarch
  • 8 teaspoons (about) warm water
  • 1 dozen uncut chicken wings
  • 2 teaspoons sesame seeds
  • 1 tablespoon green onion, sliced on the bias

For sauce: Place soy sauce, water, sugar, sambal oleck, garlic, ginger and sesame oil in a small pot over medium heat and slowly bring to a boil. Watch carefully so mixture does not burn.

Make a slurry by combining cornstarch and water, adding water gradually, with a whisk. (You may not need to use all of the water). The sauce should lightly coat the back of a spoon when dipped in. Remove from heat when done but keep warm.

Bake, grill or fry the chicken wings to a minimum internal temperature of 165 degrees 

To serve: Toss the cooked chicken wings with the sauce and place on a serving platter. Serve garnished with sesame seeds and sliced green onion.
