Cargill to expand Minnesota egg processing plant

Cargill says it’s starting a $20 million expansion next month of its egg processing plant at Big Lake, Minnesota.  The expansion – including capabilities to pasteurize, mix and cook eggs – will double the plant’s annual egg requirements to 170 million.  Employment at the plant is expected to increase by a dozen.

The expansion – expected to be operational by January – is on top of almost $40 million worth of improvements Cargill has made since 2016 to egg production facilities in Michigan and Iowa.  Plant manager Jared Johnson says improving economies and growing world population are driving increased demand for animal protein.
