Get adventurous with dinner and try a Middle Eastern inspired meal, Kofta with Chickpea Salad!

Last month, I shared this delicious Vegan Shepherd’s Pie with Pompeian. This month, let’s dive into a little Middle Eastern inspired dish, Kofta. What is Kofta? Kofta is a meat kabob that is normally found in the Middle Eastern region.
Kofta is typically made with ground beef or lamb and then shaped in more of an oval shape or a log style as opposed to a round ball like our traditional meatballs. I decided to make Kofta with Chickpea Salad that paired perfectly for a delicious dish.
Honestly, I don’t think we have really ever tried a Middle Eastern inspired meal, so this was a fun one for my husband and I to try.
It did take a bit to find ground lamb; however, we ended up at a specialty butcher in town to pick up some. If you can’t find ground lamb though, you can use beef or really any ground meat of your preference.
The key to this dish was to use the Organic Extra Virgin Olive Oil Spray from Pompeian. This is a must especially for the Chickpea Salad. Pompeian Organic Extra Virgin Olive Oil Spray is an wonderful cooking spray that utilizes a powerful pouch system without the use of propellants or other artificial additives to dispense the oil. It’s ideal for daily cooking.
It’s ideal to get a nice even coat of Olive Oil, and by using a spray it’s very easy to do that. This spray is the perfect full-bodied spray that really gives the boost you need to your dish.
What do I need for Kofta?
- Ground Meat
- Garlic Cloves
- Variety of Spices
- Organic Extra Virgin Olive Oil Spray
What do I need for Chickpea Salad?
- Rinsed Chickpeas
- Cucumbers
- Tomatoes
- Red Onions
- Feta Cheese
- Organic Extra Virgin Olive Oil Spray
- Variety of Spices
Now, it may take some extra spices like Coriander that you may not have right away in your pantry and possibly Tahini. The Tahini is an optional choice if you want a little bit of Tahini Dressing on top of your Kofta with Chickpea Salad; however, you do not have to have it. It is a great addition though.
I started these as Kofta Kabobs, but decided to simply add it to the Chickpea Salad for a delicious meal. This is a great meal for a weeknight dinner or even a themed date night.
I found that this actually encouraged my husband and I to get a bit more adventurous with our meals and think outside of our typical box of recipes that we gravitate toward.
We also preferred this made on the grill; however, if it’s too windy or cold where you are, it can easily be done indoors too. If you do it indoors, simply use a cast iron grill pan on the stove. It makes for a tasty weeknight dinner too, especially when using the indoor grill, it comes together quickly.
For the Chickpea Salad, we added it to a grill basket with foil underneath to easily add to the grill or the stove top.
Once the Chickpea Salad is nicely warmed and roasted, simply top it with some Feta Cheese and top with the Kofta. Then you are all ready for Kofta with Chickpea Salad.

Kofta with Chickpea Salad
Ingredients
Kofta:
- 1 Lb Ground Beef or Lamb
- 4 Garlic Cloves
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Tbsp Ground Coriander
- 1 Tsp Ground Cumin
- 1 Tsp Ground Cinnamon
- 1/4 Tsp Ground Ginger
- 1/4 Cup Chopped Parsley
- Pompeian Organic Extra Virgin Olive Oil Spray
Chickpea Salad:
- 1 15 oz Can of Chickpeas Drained & Rinsed
- 1 Cucumber
- 1 Cup Grape Tomatoes Halved
- 1/4 Cup Diced Red Onions
- 1/2 Tsp Cumin
- 1/2 Tsp Coriander
- 1/2 Tsp Garlic Powder
- 1/4 Tsp Salt
- Pompeian Organic Extra Virgin Olive Oil Spray
- Feta Cheese
- Tahini Paste or Dressing Optional
Instructions
- Place the beef or lamb in a large bowl.
- Mash the garlic and then mix into the meat with the remaining spices and seasonings.
- Shape the meat into an oval shape, then add a coat of the cooking spray.
- Place either on the grill directly or on a kabob stick for kabobs. At this point, these can also be placed on foil to grill or on a grill pan.
- Set aside and make the Chickpea Salad.
- Combine all ingredients for the Chickpea Salad in a large bowl.
- Spray the Chickpea Salad with an even coating of cooking spray.
- Put the salad in a foil pack or in a grill pan to place on the grill as well.
- Cook both the Kofta and the Chickpea Salad on medium-high heat.
- The Kofta can be cooked for about 10 minutes on each side or until your desired doneness.
- The Chickpea Salad will cook for about 15 minutes, mix halfway through the cook time.
- Serve the Chickpea Salad topped with the Kofta.
- Add the Feta Cheese atop the Kofta with Chickpea Salad, serve with Tahini dressing if preferred.
