We are just flying through January. Every single year just goes so fast, anyone else feel this way? I had a rocky start to this month. I got so many things wrong, ever feel that way? I had the dates wrong for things for the kids, times were wrong. I just felt all over the place. I still feel that way at times and really hope I get my groove back.
I’m excited though this is a busy time for us, although I do like when life is quiet, but we have basketball season going on right now. I also just put our daughter back into horse riding lessons. We did them several years ago and are finally getting back on track with those. I am hoping she really picks it up and loves it. I’ve actually been thinking I may take lessons too. Sound crazy? Surely not, right? The stables are just a mile from our home, so it works out well and honestly I think it would be a great hobby and self-care thing for me.
The cool thing is the lessons she will be taking now are “mommy & me”, so I can learn a lot about all things horses too. It’s our dream to have a few someday, so first I want to be sure I know what I’m doing. First things first!
Between all the activity, dinner has been quite a challenge. I’m not sure it’s ever been this difficult to not only cook dinner but actually have time to eat it! I can cook earlier in the day, which is what I’ve ended up doing or use the slow cooker but goodness between homework and then having to be at an activity, I feel like I’m inhaling dinner and running out the door.
It will slow down again though soon enough! In the meantime here is a menu for you!
