Chambersburg Public Opinion

Below are the establishments that were either inspected due to a complaint, had a follow-up inspection or found to be out of compliance during food safety inspections in August by the Pennsylvania Department of Agriculture.

The public is asked to remember any inspection is a "snapshot" of the day and time of the inspection, and may not be representative of the overall, long-term cleanliness of an establishment.

Temperatures came down in a timely manner; operator is sharing an electrical power cord with the slicer unit and the bain marie unit. The cooler unit was unplugged, upon my arrival into the kitchen. Temperatures were above 41 degrees, but adjusted quickly. Gave warning for unplugging the cooler unit; old food utensils and a wiping cloth bucket were observed in the hand wash sink, indicating uses other than hand washing. Picture taken; sewage and wastewater from the newly installed hand wash sink is not being disposed of properly into floor drain. Water is spilling onto the floor. A small piece of PVC was used to correct drainage; drive-thru window was allowed to remain open during this inspection. No service was conducted through this window. Window was closed; no sign or poster posted at the new hand wash sink in the food prep area to remind food employees to wash their hands. Given for posting.

9 violations: Non-compliant report due to repeats and management failed to comply with the directives noted in previous reports; the non-current license has been posted in public view for the last three inspections. A current license is required for postings; ammonia-based spray sanitizer was stored on the wiping cloth bucket edge where a chlorine-based sanitizer was stored. These chemicals shall not be stored next to each other due to the toxic and chemical reaction that could result, creating an ammonia-chloride mixture. Warning given; a personal medicine container was observed next to customer napkins at the service area; observed wet wiping cloths in service area, not being stored in sanitizer solution between uses; ice scoop is cracked and shall be replaced. Vessel is no longer easily cleanable; fFood facility still does not have available sanitizer test strips to determine appropriate sanitizer concentration; the final rinse solution temperature in the stationary rack, dual temperature mechanical dish machine was 141 degrees, rather than not less then 180 degrees as required by the manufacturer. Gauge deflected intermittently to 180 degrees, but returned to the 140's at the final rinse. Maintenance scheduled; the hot water used for sanitizing wares in the mechanical ware washing machine did not reach 180 degrees (or 165 degrees for stationary rack) as required after nine cycles; mugs and the holding trays found in the back area were not cleaned, since the previous inspection. These mugs were not used; pink mold-like residue found on the ice deflector plate.
