I’ve got Hawaii on the brain. I must need a vacation…

Last Friday it was Hawaiian Ahi Tuna Burgers and this morning I’m craving Coconut Macadamia Nut Waffles.

Sigh, what can I say. I love Hawaiian inspired dishes.

Making - Coconut Macadamia Nut Waffles Recipe

We first experienced coconut waffles in Maui about a year and a half ago. Dan and I were sitting in the shade of a coconut palm, at a little beach front diner. The salty ocean breeze caressed my face as I lazily sipped fresh squeezed POG and thought about making afternoon plans.

It was a perfect morning.

We had ordered a couple different dishes to share and when they showed up, the towering plate of Coconut Macadamia Nut Waffles was almost too much to bear.

Crisp on the outside, soft on the inside, and packed with fresh coconut.

They were the waffles of the gods. At least, the Hawaiian gods.
