as I was watching it, there were so many little things I noticed and then some “terminology” that I definitely didn’t pick up when I was younger. Like, I definitely don’t remember myself knowing what Buzz meant when he asked Woody if he was mocking him. I don’t know, as weird as this all sounds, it’s just funny what you pick up when you watch it again at an older age. Roasted Lemony Pesto Asparagus

A delicious way to dress up asparagus!
Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes
Servings: 2

Ingredients 

  • 1 (454 g) pound asparagus
  • 2-3 tablespoons (2 tablespoons) olive oil
  • Kosher salt

For the lemony pesto

  • 2 cups (48 g) basil leaves
  • 2 cloves of garlic
  • ½ cup (118 ml) olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • ¼ cup (25 g) freshly grated parmesan cheese

Instructions 

  • Preheat oven to 400 °F (204 °C)
  • Cut off tough ends from asparagus then place in an even layer on a large baking sheet. Drizzle olive oil all over asparagus then sprinkle with salt.
  • Roast for 12 minutes. 
  • In the meantime, in a food processor, process pesto until desired consistency.
  • Once asparagus is done roasting, drizzle pesto on top and serve warm.

  1. I can’t stop making Julie’s dishes (or stop eating them for that matter!) Leftovers? No way! This is so delish, it will be gone in 5 minutes … which is ok because it’s really quick & easy to make. Love the tangy homemade pesto – it’s so lemony and good! Roasted asparagus is the best, in my opinion and the pesto on top makes it a wonderful combination.
    As always, Julie’s recipes are easy to follow, with exact amounts and good instructions. My tip: if your lemon is rather large, don’t add all the juice at once – taste it in between. You don’t want the lemon to overpower the basil goodness ⭐️⭐️⭐️⭐️⭐️
