Elevate your lunchtime experience with our Weight Watchers (WW) friendly egg salad recipe that combines simplicity and flavor. This egg salad is a delightful blend of textures and tastes.
The secret to its light yet creamy consistency lies in the blending of its simple ingredients. A little light Hellman's mayonnaise provides just the right amount of creaminess, while plain non-fat Greek yogurt adds a tangy kick and a boost of protein. A bit of mustard kicks the flavor up a notch.
I learned how to make egg salad in large quantities when I worked in my friend Colleen's cafe several years ago. Her egg salad recipe was the simplest I'd ever seen and I'm still amazed at how many egg salad sandwiches were ordered.
It goes to show that often with cooking, as with life, simple is best. And now that I've discovered how easy Instant Pot Boiled Eggs are to peel, this recipe is quicker and easier than ever.
What Can I Use Instead of Mayonnaise in Egg Salad?
Since going back to Weight Watchers, I've played with my egg salad recipe a bit, using part plain non-fat Greek yogurt for part of the light mayonnaise. You can use all Greek yogurt instead of mayonnaise or a combination if you prefer.

What Makes this Egg Salad a Good Choice for Weight Loss?
This WW-friendly egg salad recipe is an excellent choice for individuals wanting to lose weight for several reasons:
- High Protein Content: Protein is known for its satiating effect, helping you feel full for longer periods. The combination of hard-boiled eggs and non-fat Greek yogurt in this recipe ensures a substantial protein content, making it a satisfying and filling option.
- Low in Calories: By using light Hellman's mayonnaise and non-fat Greek yogurt, the recipe maintains a creamy texture with significantly fewer calories compared to traditional egg salads made with full-fat mayonnaise. This allows individuals to enjoy a flavorful meal without compromising on their calorie intake.
- Balanced Macronutrients: The recipe incorporates a balance of macronutrients, including proteins from eggs and yogurt, healthy fats from mayonnaise (in moderation), and minimal carbohydrates. This balance supports a well-rounded and nutritious diet, which is essential for weight management.
- Flavorful Seasoning Without Excess Calories: The use of mustard, salt, and ground black pepper adds robust flavor to the egg salad without relying on high-calorie ingredients. This allows individuals to enjoy a tasty dish while maintaining control over their calorie consumption.
- Versatility and Convenience: Egg salad is a versatile dish that can be easily prepared and stored, making it a convenient option for meal prepping. Having a nutritious and satisfying meal readily available can help individuals make healthier food choices and resist the temptation of less nutritious options.
