Spanish wine dinner at Amilinda

Spanish winemaker and architect Alfredo Arribas of Portal del Priorat winery will guide guests through his wines at a dinner April 12 at Amilinda.

Here's chef Gregory León's menu for the night:

Petit Nuage goat cheese and thyme souffle with pickled green beans, paired with 2015 Gotes Blanques Grenache; chorizo-stuffed squid, carrot puree and orange syrup, with 2014 Gotes Priorat; rabbit-foie gras sausage, grilled endive and roasted baby beets, with 2013 Luno Montsant; veal sopado, chickpea pancake and herb salad, with 2013 Negre de Negres Priorat; and blood orange-rosewater sorbet and pink peppercorn marshmallow, with sparkling wine.
