I have a special love affair with stuffing. I really like it, outside of any major holiday!

It’s an integral part of these chicken and broccoli casserole, and in my opinion, makes this quick family dinner recipe. I’ve been sharing some easy casseroles and am really excited about this one!

It’s a family pleaser, and the perfect way to sneak veggies into a recipe that your kids might not otherwise eat.

I grew up with four brothers and this was a popular one in my house. No one every complained about the greens within, because it was just too tasty.

The best part about this comfort food is that it’s filling . . . and with so many kids, it’s hard to make a casserole that fills everyone up. This chicken broccoli casserole with stuffing will do that for you. And you can make it for pennies!

Fresh vs. Frozen Broccoli

I find that the best way to make an easy casserole like this one is to keep frozen broccoli on hand. I love eating fresh broccoli because of the nutrients, but that isn’t always possible.

If you can, try to find flash frozen broccoli. That means it’s frozen soon after it’s picked, which means more of the nutrients remain.

As far as chicken, I have a technique that I use constantly so it’s always on hand for recipes like this one. I buy chicken breasts in bulk from Costco, cook them, and then chop them up into pieces or cubes.

I place those in freezer safe containers, and then take them out and defrost when I need them.

Can you put uncooked chicken in a casserole?

Yes, you can if you the temperature of the casserole will to reach 160°F (this is when any bacteria is killed). So *technically* you could chop it up and put it in raw.

However, I’m kind of weirded out by raw chicken and veggies touching, etc. Plus you’d have to cook it longer . . . so just cook the chicken first.

Do you have to cook broccoli before putting it in a casserole?

You don’t have to – but I recommend that you do. If you cook raw broccoli in the oven, you may notice that it turns brown-ish.

This is because the cell walls break down and the chlorophyll escapes. I guess it doesn’t matter if you don’t care about presentation.

This is why I use frozen broccoli. It’s already cooked or at least blanched (boiled and then flash frozen). It cooks right along with all the other ingredients and it doesn’t turn brown and look unappealing to eat.

Ingredients

  • 4 cups cubed herb seasoned stuffing
  • 1 1/4 cups water
  • 4 tablespoons butter
  • 10 ounces frozen broccoli florets (1 package)
  • 2 cups cubed (cooked) chicken
  • 1 can Campbell’s Condensed Cream of Celery Soup (you can also use Cream of Chicken Soup)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Tools

Some people choose to foil and bake, but I didn’t do that. If you think your oven is going to overbake the cheese on top, you can use foil – or place on a lower rack.

Ingredients

  • 4 cups cubed herb seasoned stuffing, prepared
  • 1 1/4 cups water
  • 4 T butter
  • 10 oz frozen broccoli florets
  • 2 cups cubed chicken breast
  • 1 can Campbell's Condensed Cream of Celery Soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. If your chicken is not cooked, place on a non-stick tray and bake in a 400ºF oven for 10 minutes. Flip and bake for 15 more minutes until the juices run clear. Let cool and cube with a knife.
  2. Preheat oven (or turn down if you baked the chicken) to 350ºF. Spray a 9 x 13 inch casserole dish with cooking spray.Preheating the oven
  3. Prepare the stuffing according to package instructions (with butter and water). Press the stuffing into the casserole dish evenly.stuffing added to the bottom of a baking dish
  4. Arrange the broccoli and chicken over the stuffing.broccoli spread out on top of the chicken
  5. Stir the soup, milk, and 1/2 cup of the cheese in a small bowl. Pour over the chicken and broccoli.soup, milk, and cheese sprinkled on top
  6. Sprinkle with the remaining cheese, spreading out evenly over the top.sprinkle the shredded cheese on top of the soup mixture
  7. Bake for 30 minutes or until hot. Remove from the oven, let your casserole cool for ten minutes, then serve.chicken and broccoli casserole
