So all of a sudden my news feed is blowing up with people bashing Jenny McCarthy because doctors are saying they misdiagnosed her son in 2005 as having autism. It’s a never-ending slew of….

“Jenny McCarthy should be locked up.”
“She’s a menace to society.”
“That’s what you people get for listening to a former Playboy Centerfold.”

I take all kinds of issue with all of this and here’s why…

Number One: It was the DOCTORS who diagnosed the child, and not Jenny.

Number Two: I’m pretty sure that she’s been consistently saying, since 2008, that she was able to cure his autism. So I’m wondering how in the world this has been blown up by the media all of a sudden?

Number Three: Vaccines are linked to multiple issues including autism in more than just her son. It’s definitely a hot topic, but there is a multitude of evidence that should no longer be simply ignored. How often do you hear of drugs being pulled off the shelves and lawsuits happening after it’s too late? All.The.Time.

Number Four: Shaming a woman because of a “supposed” medical misdiagnosis and advocacy for health is wrong. For years I’ve followed her and she’s always been the voice that said “take the toxins out.” It’s not been an anti-vaccine message, but a “pro-safe vaccine” message. This is a message that I wholeheartedly agree with. I think vaccines have done some wonderful things, and I think they could do even more if the toxins were taken out. Check out a quote from her from a Green Our Vaccines Rally:

What I really am is “anti-toxins” in the vaccines. I do believe that there is a correlation between vaccinations and autism. I don’t think it’s the sole cause, but I think they’re triggering–it’s triggering–autism in these kids. A really great example is…is, sometimes obesity can trigger diabetes. I do believe that vaccines can trigger autism…It’s so much more than just mercury. That is one ingredient in the recipe of autism…People don’t realize that there is aluminum, ether, antifreeze, still mercury, in the shots.

Number Five: Bashing a woman, and making fun of her viewpoints because she worked for Playboy is pretty much sexism, right there. Yes, I’ve seen people calling her a “blond bimbo with big boobs”. I don’t think it gets much more sexist than that. That’s like saying every woman with blond hair and big boobs has no right to any sort of opinion.

I’m really disheartened that so many people are bashing and discrediting her just because she used to work for Playboy. “That’s what people get for listening to a Playboy Centerfold.” Really? That’s a low-blow. So because a woman made different choices about her body than you did, it means that nothing she ever says has any value?

I thought that our society had advanced far beyond the days of chauvinism, into an era of love, acceptance and respect for other human beings, no matter where they come from and no matter their political/religious/medical views? And hasn’t Jim Carrey been working with her in the same activist group, and saying the exact same things that she has? How could we possibly listen to an actor/comedian’s point of view on this?!?! The nerve of a man like him actually taking a stance on something like this. He clearly is way too thin and has dark hair (dripping with sarcasm)!!

Number Six: The articles circulating the internet look horribly sensationalized, saying things like “her son MAY have never had autism,” and “Jenny is reversing her initial position that the MMR shots caused Evan’s autism. Jenny now says she wants vaccinations better researched.”  Wait, isn’t that what she’s been saying all along since the beginning? “Take the toxins out.” I’m confused why this is news?

Number Seven (THE EVIDENCE):

There are nearly two dozen studies that prove that vaccines can cause autism. Advocates are demanding further study, and for companies to take the toxins out. It seems absurd to me that this somehow seems to all be discredited because doctors say they misdiagnosed one woman’s son.

I find it odd that there were two court rulings in 2012 that confirmed autism was caused by vaccines, yet people still continue to scream that all of the “take the toxins out” advocates are just a bunch of conspiracy theorists. Court ruling…you saw it, right?

In Summary…

I’d love to see us bring the debate to the table and actually have a respectful conversation vs. taking jabs at a woman’s choice to be a part of Playboy. If that’s the only evidence you can bring, then you probably won’t win Nationals for your high school debate club.

Jenny has repeatedly said (years ago!) that she cured Evan’s autism (see link above). Just because he is finally cured, does not mean that everything she’s stood for as a health advocate is wrong. In fact, I’d venture to say that it actually confirms that she knows a little something about what she’s talking about.

And seriously…no more Mom bashing. Some people choose vaccines, others do not. At the end of the day, we all want what’s best for our kids and the World, but we just see the process differently. I see no need to call someone an irresponsible parent for allowing vaccines. Just like I see no reason to bash a woman because she advocates for safer vaccines.

Jenny McCarthy should be locked up? How about she be locked on stage as a role model for other women and moms to step forward and have their viewpoints heard – no matter their history, their appearance, or their viewpoints. We have enough hatred and maliciousness in the World already. And frankly, I’d like us to leave the witch hunting back in Salem.

So where do you stand on this issue? I have no doubt this post will cause some of you to get a little fired up. Bring it. Just don’t bash me or anyone else in the comments, please. Your words said behind a keyboard can still hurt someone. No shame – discussion welcome.

Yesterday General Mills announced their commitment to make Cheerios GMO-free. But what does this mean for the average consumer, the hardcore health-nut, and the person just trying to get a little bit healthier?

If you’re unfamiliar with what GMO is, it stands for “Genetically Modified Organism.” These types of foods are banned in many places in Europe. GMO crops are known for taking over regular crops, and not producing viable seeds that can be replanted for the next year’s harvest. GMO corn even has to be labeled a pesticide for it’s genetically modified qualities that kill the bugs that try to eat it.

There’s enough evidence that GMOs are potentially harmful, and there definitely needs to be more testing to ensure their safety. If you haven’t yet, I definitely recommend watching the GMO OMG Film.

So there’s a short summary of what GMOs are, but what does this mean in regards to the recent announcement by General Mills?

Here are 8 things you need to know about GMO-Free Cheerios:

1. Under pressure from consumers, General Mills says it will discontinue using genetically modified ingredients (GMOs) in its Cheerios. This is a big win for the consumer, yay! Last year Green America (an activist group) rallied consumers to put pressure on General Mills, and it seems to have worked.

2. Most Cheerios varieties sold in Europe are already GMO-Free and have been for some time. This was a big rallying point for activists. If it’s that way in Europe, why not here? General Mills agreed.

3. The oats that are used to make Cheerios have never been genetically modified, but in the past few weeks General Mills has made changes to the sourcing of the sugar. They now use pure GMO-Free pure cane sugar instead of beet sugar.

4. This product is currently not available on shelves. All we know is that they will be available “shortly.”

5. When this does become available, the product will say “Not Made With Genetically Modified Ingredients.” No word yet on whether or not Cheerios will become “Non-GMO Project Verified.”

6. This is significant, because most big food companies haven’t made big changes like this due to the demands of consumers. General Mills is making a big move here, and this is a positive step in the right direction.

7. As of right now, General Mills has no plans to make their other cereals GMO-Free.

8. This could potentially encourage other big food companies to make this kind of move towards GMO-Free foods.

I’m extremely excited about this change. It’s a big move by a big food company….something regular consumers and activists alike have been wanting.

GMO apple1 992x1024 The Everlasting GMO Apple

America’s favorite fruit is getting a makeover. For the first time since the Flavr Savr tomato back in the mid-90′s, there might be GMO fruit available in your local produce department as early as 2014.

Okanagan Specialty Fruits (OSF) is hoping to release what they are calling the Arctic Apple in the US and Canada. But while most pro-GMO companies are fighting regulation for labeling their foods as being genetically modified, Okanagan Specialty Fruits hopes it will be a selling point to consumers, and plan to label all their apples  with “Arctic Apple” stickers to differentiate them from conventional and organic apples. What’s their angle?

These apples don’t brown.

The short of the story behind these apples is that laboratory modifications are made to shut off the enzyme that produces browning when cell injury occurs in an apple – such as slicing, dropping/bruising, etc. The process for this modification is complex, creating this trait using an antibiotic and Agrobacterium found in tiny pieces of apple leaves. But the makers of the Arctic Apple state that “All of these elements are found in nature, and carefully put together by scientists with lots of initials after their names..”.

Already at the top of the dirty dozen list (a list of produce which retains the highest amount of pesticide residue), apple consumption has gone down since the 1980′s, from about 20 lbs per year to 16 lbs per year. Okanagan Specialty Fruits says they hope to bring these numbers back up with their GMO apples, claiming that apples are “for many people too big a commitment”, and the non-browning affect will make the fruit more accessible, more long-lasting, and more versatile.

There is resistance for this apples to be approved for sale in the U.S. The Organic Advocacy Group argues that “There is no proof that Arctic Apples are harmless, but there is certainly reason to suspect that they may be harmful to humans, wildlife, and the soil environment.”

Okanagan created a small library of videos on their website addressing all the health and environmental concerns it has been challenged with. They stand by the safety of their product, explaining that, while other GMO’s are designed for the benefit of the farmer, such as built-in pest control, their product is different because it benefits the consumer, and they promise to preserve key nutrients in their apples, such as vitamin C.

Perhaps one of the largest concerns comes directly from apple farmers, and their concern is a big one. How will cross-contamination from bee’s cross pollenating  be prevented? Okanagan addresses this on their website, but not to the satisfaction of the leaders in the apple industry.

One point made in the conversation about whether there is a need for this kind of technology: what about tossing your apple slices in good old-fashioned lemon juice to prevent browning?

Surprisingly, genetically modified food does not require approval from the FDA to be sold in the U.S., however Okanagan has submitted data to the FDA for review.

IMG 0357 1024x764 Whole Foods Market says farewell to Chobani Yogurt

After an embarrassing recall this past September due to mold issues causing their yogurt containers to “bloat”, Chobani takes another blow as Whole Foods Market Inc. has decided to discontinue their sale of Chobani yogurt products as early as January, 2014.

Greek Yogurt popularity his grown tremendously in over recent years, making up nearly half of all yogurt sales in the U.S.  Chobani dominates these sales, but there are many other competing brands who hope to gain in market share using the GMO-free  and Organic business model.

Chobani, who says it is committed to giving it’s customers all-natural ingredients, does source it’s milk from cows who are fed a genetically modified feed. On Wednesday, the company addressed the unfolding debacle between them and Whole Foods by writing:

“As America’s No.-1 selling Greek Yogurt brand, we require a high volume of milk, and right now there is not enough organic milk available to meet our broad consumer demand.

We continue to stand by and work with the 875 farms that provide us with milk as they explore new feed options. In the meantime, we’re doing everything we can with what’s available to make the best cup of yogurt; using only natural ingredients and no preservatives, none of our non-dairy ingredients has been genetically modified, and our milk comes from cows that have not been treated with rBST[1].”

Whole Foods says that’s not enough. Their decision to drop Chobani is a part of it’s effort to discontinue the sale of any genetically modified foods, over the next couple of years, that are not properly labeled as containing GMOs.

Some are skeptical that Whole Food’s intentions were selfish, accusing the health food superstore that they are only removing the #1 Greek yogurt brand from their shelves in order to raise the sales of their own brand’s greek yogurt, “365″. Whole Foods has neither confirmed or denied the accusation, but their motives aside, it’s an exciting time for advocates of GMO labeling, as Whole Foods leads the movement of GMO labeling with their “Right To Know” commitment, in which they promise to label all products carried in their store containing GMOs.

Omega 3s More omega 3s, less heart disease

New research from the USDA shows that milk consumption is down in the U.S, while Organic milk sales are up, and steadily raising, accounting for about 4 percent of milk consumption in the U.S. That’s a number that will hopefully continue to climb, considering what we are learning about the nutritional make-up of Organic milk Vs. Conventional milk.

Cows raised in confined spaces, eating a diet of grains alone within it’s barn stall aren’t producing the same milk as cows raised primarily grazing on legumes and grasses from a pasture. In order to be certified organic milk, the FDA requires the cows get at least 30% of their dry feed from grazing the pastures a minimum of 120 days out of the year. Many smaller dairy farmers have higher standards for their dairy cows, yet even with that slight change in diet, FDA certified organic cows are producing milk with 62% more Omega-3′s than conventional cows.

This is extremely relevant, as it comes at a time when we are being urged to balance our intake of Omega-3′s and Omega-6′s, due to the declining quality of many Western diets: Fried foods, corn (which seems to be in nearly everything these days), and many of the oils we consume on a daily basis are all high in Omega-6′s, and contain almost none, or very little, omega-3′s.

The imbalance between Omega-6′s and Omega-3′s causes inflammation, which leads to many other health issues (diseases, like heart disease, cancer, and diabetes, that are the primary causes of death and morbidity today). So if you are eating a diet high in Omega-6 and low in Omega-3, you will have increased inflammation, while if you’re diet is high in omega-3 and low in omega-6, you will decrease inflammation.

All of this knowledge is what has producers of organic milk so excited  - because not only is organic milk higher in omega-3, it’s also 25% lower in omega-6, giving it a place high on the list of foods to eat balance our omega-3 & 6′s, along with fish and nuts.

To reap all the benefits of organic milk, research suggests consuming whole milk (4% fat), as apposed to 2% or skim, because skipping the fat means skipping the omega-3′s. This is scary to many people who are watching their weight, but interestingly enough, studies are being published that are finding that children who drink whole milk are much leaner than children who drink 2% or skim.

Whichever kind you end up choosing, be it whole, 2%, 1% or skim, research supports that you will still benefit by choosing organic over conventional.

Apple carrot zinger juice1 Apple Carrot Zinger Juice. Zing!

Winter is a great time to start introducing fresh squeezed in to your routine.  This colder months mean less sun, which means less local options for fresh produce (this is of course dependent on where you live).  We need nutrient-rich meals all year around, and juicing is a fantastic way to do that.

This recipe is perfect in the morning, because it kicks your butt. And as always, be creative with additions! I love t0 add a little mint sometimes.

Apple Carrot Zinger Juice. Zing!

Yield: 2 Cups

Apple carrot zinger juice2 Apple Carrot Zinger Juice. Zing!

Ingredients

  • 5 organic carrots, washed
  • 3-4 organic apples, washed
  • 1 organic lemon, washed
  • 1 organic orange, washed
  • 1-2 TBSP ginger (to taste)

Instructions

  1. Remove skin from lemon, orange, and ginger
  2. Put through juicer
  3. Serve over ice, enjoy!

When I want to bake something to have around the house to snack on, I want that something to be these muffins. These things will make you happy. They are low-fat, incredibly moist, and while they have a perfect fall flavor, they are light enough for snacking on all year around.

The recipe calls for plain yogurt (non-greek). You can use non-fat yogurt, but whole fat yogurt really makes these moist. And keep those apple chunks on the larger side – otherwise they tent to get more mushy than is pleasing.

Apple orange spice muffins

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup turbinado sugar
  • 1/4 cup dark brown sugar, packed
  • 1 Large organic, free-range egg
  • 1 cup organic plain yogurt (not Greek-style)
  • 1 1/2 cup organic whole wheat flour
  • 1/2 cup organic whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups peeled, cored and chopped baking apples (2 large apples)
  • Fresh zest from 1 orange

Instructions

  1. Preheat the oven to 375°F. Grease a 12-cup muffin pan.
  2. Beat together the butter, granulated sugar and brown sugar until fluffy, 1-2 minutes. Scrape down the sides of the bowl with a rubber spatula
  3. Add Eggs, mix well
  4. Beat in yogurt
  5. Add the flours, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. Beat on low speed until just combined
  6. Add apples until just combined
  7. Divide batter in to muffin pan, between 12 muffins. Sprinkle with 2 tbsp brown sugar and 2 tbsp orange zest.
  8. Bake for 25-30 minutes.

Fall Harvest Recipes Fall Harvest Recipes   Autumn breakfast hash

Breakfast isn’t just for breakfast. It’s perfect for lunch and dinner too, especially during the colder months! Even the classic bacon, eggs and pancakes can really hit the spot sometimes, and is a great go-to toward the end of the week, when it’s just about time to go grocery shopping.

This dish is a perfect “Breakfast for dinner” dish. You can add cheese to it, bacon, or try topping it with scrambled or poached eggs instead of fried.

It’s one of those “one-pan meals” making it pretty easy! The key is to cook all it’s components slowly, at a low heat, to really bring out all the flavors.

Autumn breakfast hash with caramelized shallots, sweet potatoes, kale & more!

Yield: 1 serving

Ingredients

  • 1 tbsp butter or coconut oil
  • 1 medium shallot, thinly slices
  • 1 small sweet potato, chopped in to small, 1/2 in cubes
  • 1/4 cup thinly sliced leeks (light green or white part)
  • 1/4 cup bella or crimini mushrooms, sliced
  • 1/2 cup organic kale, chopped
  • 1-2 free range, organic eggs
  • Salt & pepper

Instructions

  1. Heat butter or coconut oil in medium skillet over medium heat
  2. Start with adding your shallots - get them cooking, then turn down the heat to low and let them caramelize.
  3. Add sweet potatoes, and sprinkle a dash of salt and petter. Allow to cook for 5-7 minutes, stirring occasionally.
  4. Add leeks to pan, add a little more butter/oil if necessary. Let cook for 5-7 minutes.
  5. Add mushrooms & kale to pan, stir to coat with butter/oil, cover pan. Let it cook slowly for 5-10 minutes.
  6. Once contents of pan are cooked, and tender, transfer items to bowl, cover with foil to keep warm.
  7. Turn heat up to medium/high, add egg. Turn heat down to medium/low, cover until egg is cooked to desired consistency.
  8. Once egg is cooked, pour vegetable hash in on to plate, top with egg. Enjoy!

Looking for a healthy, hearty meal to aid in your recovery from the holiday weekend? This is a good one.

A common mistake people make when choosing their cuts of chicken is going with boneless, skinless cuts. This is especially tragic when preparing chicken breast, because without the skin, which keeps the chicken moist, and the bone, which adds tremendous flavor, you end up with a dish that is so much less flavorful and nutritious than it had the potential to be.

What is more, you’ll pay less per pound when you go with bone-in, skin on. Especially when you are buying free-range organic chicken.

And remember – try buying the whole bird and breaking it down yourself! Depending on the size of your family, you could have dinner for 2 or 3 nights from one 4 pound whole chicken.

Organic Pan Roast Chicken with lemon and thyme.

Ingredients

  • 4-6 Free-range organic chicken thighs, bone-in, skin-on
  • 1 Tbsp olive oil
  • 1 organic lemon
  • 3 or 4 springs fresh thyme
  • Sale & pepper

Instructions

  1. Pre-heat oven to 400 degrees F
  2. Season chicken with salt & pepper
  3. Heat olive oil on oven-safe skillet (preferably cast iron) over high heat
  4. Place chicken on olive oil, skin-side down
  5. Let chicken cook for 2-3 minutes. Turn heat down to medium, let the chicken continue to cook in pan for 10-12 minutes
  6. Add 4-5 lemon slices to pan with chicken, arranging around on top of chicken, as well as thyme
  7. Transfer chicken in skillet to the oven, let it cook for another 10-12 minutes
  8. Flip chicken to skin side up, let it continue to cook another 5 minutes.
  9. Transfer to plate and allow to rest for 2-5 minutes.
  10. Serve with your favorite light salad, and some roasted veggies

Ingredients

  • 4 Cups organic whole milk
  • 3 Tablespoons sugar
  • 2 Tablespoons natural cocoa powder
  • 1/2 Teaspoon Cinnamon
  • 1 Teaspoon Vanilla OR 1/2 a split vanilla bean

Instructions

  1. Whisk all ingredients together in medium size sauce pan
  2. Let simmer on low heat for 30 minutes (do not allow to boil)
  3. Serve with freshly whipped cream, and chocolate shavings

10. Tea Infuser and Tea Kettle

Whether it’s time to make some herbal teas to ward off that cold, or just time to make some yummy spiced tea for the holidays, foodies love making up some great teas or even tinctures (I should know…I’m obsessed!). In order to do this, you need a good tea kettle ($39.47) and tea infuser ($0.99). Most stores are running deals on these types of items right now. My favorite place to nab these kids on items is at Cost Plus World Market. Just make sure you grab a nice heavy duty tea kettle. You’ll spend a little more money, but it will last longer!

I am strong believer in the baking as therapy. Granted, the situation doesn’t always lend itself to being therapeutic, there are a lot of variables. Like, is there a glass of wine involved? Are there children underfoot? Etc.

But in just the right context, baking can melt away the stress of the day. I like to intentionally bake for fun before the stress of the holidays- bake for me. This apple sauce bread recipe is a great, simple dessert to make to have around the house to snack on.

 

Apple Sauce Bread

Ingredients

  • 1/3 Cup butter, softened
  • 1 Cup turbinado sugar
  • 1 egg
  • 1 1/4 Cups organic, unsweetened apple Sauce
  • 1 1/2 Cups all purpose whole wheat flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg

  • 1/2 Cup raisins (optional)
  • 1/2 Cup chopped walnuts (optional)

Instructions

  1. In a large bowl, cream the butter and sugar
  2. Add egg and apple sauce, mix until combined
  3. In another bowl, combine the remaining dry ingredients
  4. Slowly add to butter mixture
  5. Add raisins and walnuts
  6. Pour in to greased 8 1/2 x 4 1/2 loaf pan.
  7. Bake at 350 degrees for 1 hour or until middle is set.

When we think of fall desserts, we usually think of pies, or maybe apple crisp. We think of things with crust, or topped with frosting. Let’s expand our horizons a little: Pears poached in red wine.

It isn’t exactly a typical go-to fall dessert, but in my opinion, it should be. It’s so simple, smells SO good, and is more delicious than you could imagine. Pears, red wine, a cinnamon stick or two, a few more spices, and done. An elegant dessert you might see in a restaurant, right in your kitchen. Oh, and did I mention it’s gluten free??

Ingredients

  • 4 Organic Pears
  • 1 bottle of red wine (dry, full-bodied works best)
  • 3/4 cup sugar (honey works too!)
  • 1 vanilla bean, split in half lengthwise
  • 1 cinnamon stick
  • 1 clove
  • Swirl of orange rind

Instructions

  1. Peel the pears, and cut off the very bottom so they will sit up straight
  2. In a medium/large saucepan, add the wine, sugar, vanilla bean, cinnamon stick, clove, and orange rind
  3. Turn the heat to low/medium, let simmer until sugar dissolves
  4. Add pears, so they are submerged
  5. Cover, and let simmer on low for 25-35 minutes, or until tender
  6. Serve at room temperature with whipping cream or Crème fraîche

I always forget how awesome vegetables smell when they are roasting slowly in the oven, and I underestimate the power that scent has over me. Fresh, warm, earthy goodness.  The thing I love about this recipe is that once your brussels sprouts are roasted, you have a blank canvas for creating one of a hundred different kinds of dishes. I’m a sucker for variety, so I make this a little different every time. You can add nuts (toast them in the oven first!), raisins, cheese (goat, feta, parmesan..), and toss these in almost any dressing. Have it as a main dish, or throw it next to some nice pan seared chicken. Or, give this version a try.

Gluten Free! Balsamic Roasted Brussels Sprouts with Quinoa & Feta

Fall vegetable recipe2 Fall Vegetable Recipes   Gluten Free! Balsamic Roasted Brussels Sprouts with Quinoa & Feta

Ingredients

  • 1 cup cooked red quinoa
  • 3 Tbsp balsamic vinegar
  • 1 1/2 cups organic brussels sprouts, washed and halved
  • 1/3 cup crumbled organic feta cheese
  • salt & pepper

Instructions

  1. Preheat oven to 350 degrees
  2. Toss brussels sprouts in balsamic vinegar, sprinkle with salt & pepper
  3. Lay brussels sprouts on rimmed baking sheet, roast in oven for 25 - 30 minutes (until tender, but not mushy)
  4. Let brussels sprouts cool, add to large bowl
  5. Toss with quinoa & feta. Drizzle just a little olive oil over mixture, and toss to mix.
  6. Season to taste with salt & pepper, and enjoy!

The nice thing about sales in the bread aisle is that you can get a couple loaves of bread on the cheap. The bad thing is trying to use it all up before it goes bad. You can only fit so many loaves in your freezer! Thankfully I have this great bread pudding recipe. Bread pudding is one of the easiest desserts to make – it’s pretty fool-proof. And you can take liberty with what kinds of things you add – instead of raisins, try dried cranberries! Or add some walnuts. Day old sourdough bread works great for this recipe, but a good whole grain bread works too. Whatever you have handy.

Try serving it with vanilla ice cream sprinkled with cinnamon, or better yet, Egg Nog ice cream, if you’re feeling festive.

Bread Apple Pudding – A Comfort Dessert

Bread Apple Pudding 2 Bread Apple Pudding   A Comfort Dessert

Ingredients

  • 1 1/2 Cups Whole Milk
  • 3/4 Cup Turbinino Sugar
  • 3 Large Free-range, organic eggs
  • 1/4 Teaspoon Cinnamon, plus some for sprinkling
  • 5 Slices of White bread, crust removed, cut in to 1 inch cubes. Day old bread works best.
  • 1 Large tart apple, such as granny smith. Peeled, cored, and cut in to 1 inch chunks
  • 1/2 Cup raisins

Instructions

  1. Preheat oven to 350 degrees
  2. Butter a glass pie dish
  3. Whisk first 6 ingredients in large bowl.
  4. Gently add bread, apple, and raisins. Stir gently to combine.
  5. Bake for 30 minutes, then rotate in the oven. Sprinkle with cinnamon.
  6. Bake for another 30 minutes, or until set in the middle.
  7. Serve warm, with ice cream.

Looking for a festive dessert to accompany a comforting autumn dinner? This roasted apple spice cake is a winner. Dense, moist, and not-too-sweet, this cake is worth your time. As is always the case with baking, quality of ingredients matters. Choose fresh, organic apples, local honey, and you won’t regret the extra time it takes to make the apple sauce from scratch (though store-bought is fine too).

I was a little more generous with the spices – a pinch or two more of cloves, cinnamon and nutmeg. The combination of the frosting and the spices is what fall baking is all about!

 

Glorious Roasted Apple Spice Cake

Prep Time: 45 minutes

Cook Time: 1 hour

1 hour, 45 minutes

Yield: 1 round layered cake

Ingredients

    For the Cake:
  • 3 Medium organic tart apples (such as granny smith). Peeled, cut in half with the core removed
  • 3 3/4 cups all-purpose flour
  • 3/4 tsp sea salt
  • 3/4 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1/2 tablespoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg (fresh is best!)
  • 3/4 cup organic, local honey
  • 2 1/4 cup organic applesauce (or homemade!)
  • 3/4 cup packed dark brown sugar
  • 3 large organic, free-range eggs
  • For the frosting:
  • 1 8-oz package organic cream cheese, at room temperature
  • 1 1/2 sticks organic butter, at room temperature
  • 1/2 tablespoon real vanilla extract
  • 3 cups powdered sugar, sifted

Instructions

    For Roasting the Apples:
  1. Preheat oven to 375.
  2. Line a baking sheet with parchment paper and place apples on sheet
  3. Roast for 15-20 minutes, until dry looking and tender.
  4. Remove and let cool.
  5. For Cake:
  6. Preheat oven to 350 degrees
  7. Combine all dry ingredients, whisk to combine
  8. In another bow, whisk applesauce and honey until combined
  9. In stand mixer, mix butter and brown sugar until fluffy.
  10. Add eggs, 1 at a time, being sure to scrape down sides of bowl often
  11. Add 1/3 of flour mixture to butter mixture, mix to combine
  12. Add 1/2 of apple sauce/honey mixture to butter mixture
  13. Taking turns with flour mixture and apple sauce mixture, gradually add remaining to butter mixture to combine
  14. Chop apples in to 1/2 in pieces, fold in to batter
  15. Divide batter between 2 buttered round cake pans
  16. Bake in the oven for 35-40 minutes, or until toothpick inserted in center comes out clean.
  17. For Frosting:
  18. In a stand mixer, mix cream cheese and butter until fluffy
  19. Add vanilla
  20. Gradually add sifted powdered sugar
  21. Assembling cake:
  22. Remove cake from oven and allow to sit for 10 minutes.
  23. Remove from cake pans and let cool completely on wire rack
  24. Once cool, frost generously, started with the first layer, and adding the second, being sure to chill in the freezer for 10 minutes to set filling in-between layers.
  25. Keep in refrigerator, or serve at room temperature

Kale, Italian sausage & White Bean Soup

Ingredients

  • 1 LB Organic Sweet Italian Sausage (local, if possible), sliced in to coins
  • 2 T extra virgin olive oil
  • 1 Cup organic chopped onion
  • 2 or 3 garlic cloves, chopped
  • 2 Medium organic carrots, coined
  • 4 Cups organic chicken broth
  • 2 14-oz cans organic great northern beans, drained and rinsed
  • 8 cups Organic kale, chopped
  • Salt & Petter
  • Grated parmesan cheese

Instructions

  1. Heat olive oil in large pot over med-high heat
  2. Add sausage to pot and brown, 5-7 minutes
  3. Add onion & garlic to soften
  4. Add broth, carrots, and kale. Bring to boil
  5. Turn down heat and allow to simmer for 1 1/2 hours
  6. Add dash of salt & pepper, to taste.
  7. Add beans, let simmer for 10 minutes
  8. Serve sprinkled with grated parmesan cheese

One of the biggest struggles as a parent is dealing with feeling guilt. For not doing enough of this or that. For not being a perfect pinterest mom. For not “having it all together”. For losing our tempers. Losing our patience. For not cherishing every moment like we said we would.

These things are a big fat lie, though, and deep down, we all know that. We may fail at times, or have bad days, but we aren’t failures as parents. We are human.

Anyway, one biggie guilt-inducer is food. Life is crazy, and it’s can be very hard to get good food in our kids stomachs when time is limited. It’s easy to feel guilty for that McDonalds lunch, or heavily-processed pre-packaged sugary whatever. Sometimes we just need a quick go-t0 in our recipe arsenal to fall back on. Below, I have two such recipes. Give these great healthy snack recipes for kids a try.

Almond Butter Apple Dip

Ingredients

  • 1/4 Cup Organic Almond Butter, creamy
  • 1/4 Cup Organic Pain Greek Yogurt
  • 1tsp Honey (local is best!)
  • 1-2 organic apples, cut it to slices, core removed

Instructions

  1. Combine all ingredients, stir well until smooth.
  2. Dip apples in sauce, enjoy!

Oatmeal Almond Butter Bowling Balls

Ingredients

  • 1/4 Cup Organic Old Fashioned Oats
  • 1/4 Cup Organic Almond Butter, Creamy or Crunchy
  • 1 TBSP Honey (Local!)
  • Dried Cranberries, raisins, dark chocolate pieces, your choice!

Instructions

  1. Combine all ingredients in bowl
  2. Mix well (you may want to just use your hands)
  3. Depending on how oily the almond butter is, you want want to play with the ratios until mixture isn't stucky, but will hold shapes.
  4. Roll in to small, 1in balls
  5. Refrigerate for 20 minutes, and enjoy!
