Strawberry Yogurt Salad Recipe

I'm guilty. I am one of those people that has made a new year's resolution to be more conscious of the food that I am eating. I am usually a pretty good eater. I pick up fruits and veggies quite often as a snack, but I also pick up handfuls of chocolate and chips too! The older I get, the more I realize that I need to pay more attention to what I'm putting into my mouth. This strawberry yogurt salad is the perfect meal for lunch time. Or serve it as a fresh side. Eating more fruits and veggies never hurt anyone!

Strawberry Yogurt Salad

Ingredients
1 Cucumber, sliced
1 Cup strawberries, halved
1 Cup spinach
½ Cup red basil leaves
2 Tbsp mayonnaise
2 Tbsp Greek yogurt
1 Tbsp balsamic vinegar
1 Tsp honey
Salt and pepper to taste

Directions
Mix the mayonnaise, greek yogurt, vinegar, honey, salt, and pepper.
Stir until well combined.

You can steam the spinach and red basil leaves for 5-6 minutes. Once done, set them aside to cool down. Or you can serve the spinach and basil leaves uncooked {my preference}.
Fill a bowl with the cucumber, strawberries, spinach, and red basil leaves.

Serve with the dressing and enjoy.

You can incorporate pineapple or mango chunks into the salad for a tropical kick.
