The Kentucky Derby is coming up next weekend. We aren’t into horse racing, but we always watch The Derby. It’s a great excuse to eat good food and drink bourbon! These Kentucky Hot Brown Crescents are perfect for watching The Derby. Turkey and bacon wrapped in crescent rolls and topped with a tomato slice and a homemade cheese sauce. How could they not be good?!?!
How to Make Kentuck Hot Brown Crescents
These crescent rollups are super easy to make. Separate crescent rolls into triangles. Divide chopped turkey between the crescent rolls. Top with a slice of bacon and roll up the crescent rolls and place in a baking dish. Place one slice of tomato on top of each crescent roll.
To make the cheese sauce, melt butter in a saucepan. Stir in flour, and cook for about one minute. Whisk in milk and cook for about two minutes. Season with salt, pepper, and nutmeg. Remove from heat, and stir in cheese. Pour Mornay sauce over crescent rolls and bake.
- I used some Oscar Mayer Carving Board turkey in the crescents. I wanted thicker slices of turkey and the Oscar Mayer Carving Board turkey worked great.
- You can also use sliced deli turkey in these if that is what you have on hand. Either way will work great!
- I took a shortcut and used precooked bacon for this recipe. I have a big package of precooked bacon from Costco and it worked great.

Kentucky Hot Brown Crescents
Ingredients:
Mornay Sauce
- 1 Tbsp unsalted butter
- 1 Tbsp all-purpose flour
- 1 cup milk
- pinch of freshly ground pepper
- Freshly grated nutmeg, to taste
- ½ cup coarsely grated Gruyère or Swiss
Crescents
- 1 package refrigerated crescent rolls
- ½ lb thick sliced turkey
- 8 slices precooked bacon
- 2 tomatoes, sliced
Instructions:
- Preheat oven to 375ºF. Spray a 9×13-inch pan with cooking spray. Set aside.
Mornay Sauce
- Melt butter in a heavy-bottomed saucepan over medium-high heat. Stir in flour, and cook, stirring constantly, about 1 minute. (Do not let mixture brown.) Add milk, whisking constantly. Bring to a low boil, and cook, stirring constantly, about 2 minutes more. Season with salt, pepper, and nutmeg. Remove from heat, and stir in cheese. Allow to cool slightly.
Crescents
- Separate crescent rolls into triangles. Divide turkey between crescent rolls. Cut each slice of bacon in half, place on top of turkey. Rollup crescent rolls and place in prepared pan. Place one slice of tomato on top of each crescent roll. Pour Mornay sauce over crescent rolls.
- Bake for 20 to 25 minutes.
