Epcot Germany’s Nudel Gratin

This recipe is from the Epcot International Food and Wine Festival Cookbook. We’ve been to the food and wine festival for the past two years. It is a lot of fun to eat and drink your way through the World Pavilion in Epcot! One of our favorite dishes is this Schinken Nudel Gratin from Germany. It is basically a ham and cheese noodle casserole. The recipe is in the most recent festival cookbook, so I gave it a try.

The original recipe did not include ham or onions, but what we ate in Germany did. I added both to this recipe. The casserole is super easy to make and tastes just like what we ate in Epcot. Ham and cheese baked in a creamy sauce. Pure comfort food! This is such an easy weeknight meal that is on the dinner table in under an hour. We ate this for dinner last week and had the leftovers the next day. This casserole is equally delicious reheated. Give this delicious recipe a try the next time you need a meal the whole family will enjoy!

How to Make Ham & Cheese Noodle Casserole

This cheesy casserole is super easy to make with pantry staples. Cook pasta in boiling water according to the package directions for al dente pasta. Drain and set aside. In a large bowl, whisk together heavy whipping cream, eggs, salt, black pepper, dried minced onion, ground nutmeg, shredded white cheddar cheese, and shredded swiss cheese. Add cooked diced ham and stir. Add the cooked pasta to the ham mixture. Pour the pasta into a casserole dish. Cover with aluminum foil and bake. Remove the foil and top with more shredded cheeses. Bake until the casserole is bubbly and the cheese has melted. Garnish the casserole with fresh parsley and enjoy!

  • This is a great recipe to add vegetables to. Green onion, red pepper, green pepper, broccoli florets are all great.
  • What kind of ham do you use in the casserole? You can use thick sliced deli ham, chopped ham steak, packaged diced ham from the grocery store, ham from your Christmas and Easter leftovers all work great.
  • I use dried minced onion flakes. Feel free to substitute fresh chopped onion or onion powder.
  • I use swiss cheese and white cheddar cheese. Feel free to use any cheese that you enjoy. Parmesan cheese, mozzarella cheese, cheddar cheese, and gouda cheese all work great.
  • Can Ham & Cheese Noodle Casserole be made in advance? Yes! You can assemble the casserole ahead of time and refrigerate it before baking.
  • Can Noodle Gratin be frozen? Yes! Assemble the casserole and cool completely. Cover the baking dish with aluminum foil and freeze. When ready to bake, thaw the frozen casserole and bake as directed below.

  1. Excellent for left over ham, it turns out perfect every time I make it. I wouldn’t change a thing.

  2. This has become an oft-requested family favorite. I make it exactly as posted, but double the recipe and increase the initial baking time to 45 minutes. It fits in a deep 9X13 lasagna dish. Thanks so much!

  3. This is excellent! I topped with butter toasted crushed Club crackers. I like that it doesn't use canned soup as the base.

  4. Just made this tonight for the first time and it was a hit….with the adults and toddlers alike! I didn't change the recipe at all and it was delicious with plenty of leftovers for the week. I served it with some fresh fruit since it was rich. We will definitely make it again!

    1. I tried making this in the crock pot and cooked it for 4-6 hours on low and it came out great!! just cook the noodles just to the al dente stage other wise they will be over cooked.

    2. I have made this this in the crock pot and cooked it on low for 4-6 hours. DON'T fully cooked the noodles only cook them until they are just Al Dente other wise they will over cook and become mushy!
