Fresh veggies were the core of my 99 Cents Only Store trip. Maybe it’s because of the hint of spring in the East Bay today. Have you ever seen a purple cauliflower?! Today’s display of cauliflower (white & purple), broccoflower (bright green), and broccoli was reminiscent of colorful Easter eggs. A delight for the eyes & your plate. An easy swap-out for spinach, would be asparagus which is also available at the 99 Cents Only Store. I love having the cottage cheese w/pineapple for an easy lunch on-the-go.
