Tomorrow I take a mini-vacation to Alaska. I’ll be gone four days with my sister and mom for a girl’s weekend. This means my sweet, handsome husband is in charge of the kids for the weekend (bless his ever-lovin’ heart). I have total faith that everything will be under control. But I couldn’t expect him to let me go on vacation and make meals out of random ingredients in the pantry and freezer, all for the sake of a budget challenge. . .

So I went to Safeway this afternoon and stocked up on convenience foods so they will survive (happily) over the weekend. I spent $$49.58 (gasp), bringing our monthly budget challenge total to $186.32 for the month. I’m hoping this is my last shopping trip for the month – I bought foods specifically for next week, to get us through until the end of the month.

So let’s get to this. . . .yesterday I shared two Budget Challenge posts – I provided an update on my what I spent in Week 3 (more than I expected) and I also shared my meal and shopping plan for this next week. Although it’s been hard sharing every grocery purchase we’re making, it has been great having the accountability. I’m hoping we come in under $200 for this month, which should easy to do – and probably half of what we spent last month! Meal planning and discipline are two of my weaknesses – so it’s been great forcing myself to do this. How is your budget doing this month?

Last night for dinner I browned up some moose meat from the freezer and tossed it into the crockpot with sautéed onions, tomatoes and marked down mushrooms. I added oregano and garlic – and ta-da, we had an easy spaghetti sauce. Served with pasta, canned beans and Grandma’s homemade rolls. I have a TON of canned tomatoes – so I need other ideas for recipes to use some up!
