Quinoa Fried Rice

We all know quinoa is a superfood. Did you know it's the perfect rice substitute for fried rice?! I love being able to enjoy a bowl of this goodness without stressing about the refined carbs. I'm a white rice lover. I grew up eating it for breakfast, lunch, and dinner and I still enjoy it. However, I like to do a little healthy makeover on all my favorites. I just know you will enjoy this one too!

Note: I like to cook my quinoa in chicken broth instead of water for more flavor.

Ingredients:

1 tbsp coconut oil
1 chicken breast, sliced thinly
salt and pepper, to taste
1/2 cup onions, diced
1 garlic clove, minced
2 eggs, beaten
12 oz. bag frozen peas and carrots
2 cups cooked quinoa
2-4 tbsp of soy sauce, to taste (you may also use Bragg's Liquid Aminos or Coconut Aminos)
1 tsp toasted sesame oil

Directions:

Heat wok or large skillet to medium high.
Season chicken breast with salt and pepper.
Add coconut oil till melted then add chicken, stir frequently.
When chicken is almost done add onions and garlic. Cook until onions are translucent.
In a separate pan, cook the eggs as scrambled eggs until done.
When onions are cooked through, add frozen peas and carrots to the wok. Stir frequently for even cooking.
Add quinoa to wok and stir. Cook for 1-2 minutes until heated through.
Pour soy sauce around the rim of the wok. Fold quinoa mixture in from the outside edges. Stir until soy sauce is well incorporated. Feel free to add more soy sauce to taste.
Add cooked eggs.
Finish with sesame oil.

What I love most about fried rice dishes are you can always customize them. Don't want chicken? No problem! Want more veggies? Throw those suckers in! Have fun in the kitchen and adjust to your dietary needs.

Why I Suck As A Blogger

Okay so this picture has nothing to do with the post. What kind of blogger would I be without a selfie?

I am the worst at interior decorating. Seriously. I have no vision and am clueless on how to make my house "pretty." I buy what I'm attracted to regardless of if it goes with the "decor" or not. Our bedroom is never decorated..ever. One day I will change that but I would rather spend my money on food or travel.

I live in sweats and no makeup. Yes, I am a Glam Hungry Mom who can be found in a less glamourous state at home. I'm currently rocking a bun, basketball shorts, a cami, and mascara. The end. Leaving the house is a completely different story. I make sure makeup is on my face, hair is in check, and outfit looks good. I have this thing where I can not wear anything but sweats, shorts, or pjs once I get home.

I haven't created any new recipes in a month. I'll give myself the pass of moving and that not everything has its proper storage yet. To be honest, I haven't even cooked that much. Ever since I moved I've been wanting to try all the local spots. I need to apologize to my bank account.

I wish I was as organized as most women. I do my best to stay organized. Then, I look at my Grammy's house or other blogs and wonder "how the hell do they do that?" I need help. I have an Erin Condren planner, a notebook of ideas, and that's it. I need the Martha Stewart gene stat.

I am almost always behind on emails. I promise it is nothing personal. Ever since the move, I have struggled to stay on top of my emails. My son's nap time is my work time and he hasn't been napping too much lately. It's time to come up with a new plan of action. Also, I always feel weird responding on my phone...anyone else?

I need to network more. I love getting to know other bloggers and new companies. I need to do a better job of reaching out to meet new people. Summer goal!

I'm indecisive. For example: I have been wanting to change my design for months now. I made it myself but feel like it has been missing that "something something." I finally decided I'm going to do it but, it took about 6 months of back and forth. I'm also that girl who sees a shirt she likes and gets two colors instead of picking one.

I don't have perfect grammar. I really don't. I was the girl who loved math and hated writing. Who knew I would end up loving blogging?! In college, I made sure to take all my stats and calculus classes before I even took English 101. It just seemed so dreadful to me, however blogging is a joy to me. I'm a complicated woman I guess.

I'm sure there are a thousand reasons more reasons why I'm not your typical blogger (or girl for that matter). I love what I do. I love the friends I have made. I love the supportive community. I love learning about other people. I love blogging. I love you guys. And at the end of the day that is what really matters.

I Need Your Help! {Disneyland}

In a few short days, the fam bam is heading down to Anaheim for a day trip to the happiest place on Earth! That's right...Disneyland! I always love asking people their favorite spots, places, eats, restaurants, and must-sees.

Damian is 3 and I'm pregnant. Obviously, that means no roller coaster or Soarin' for us. Have you gone while pregnant or with a young child? What rides are a must? What food needs to get in my belly? Any special things to see or do? I need your help! We have reservations at the Blue Bayou for lunch, and I can finally check that off my bucket list.

We aren't telling Damian about going to Disneyland. He's been asking to go for a while, and we decided to surprise him. Since I won't be going on any major rides, should I bring my DSLR or stick with the iPhone? Do you think it will be too much to carry?

I'm thinking I'm going to vlog the experience so I can get his reaction. Speaking of vlog, I really need to up my YouTube game. Any video suggestions?

On a completely different note: how cute is Damian learning to first ride his bike? We have steering down but we're still trying to teach him how to pedal. Any help would be greatly appreciated!

A Day In Monterey

For Mother's Day, we drove down to Monterey with Pat's Uncle, Aunt, and Cousins. I have heard so much about them so it was wonderful to finally meet everyone!

I have never been to Monterey Bay before. Talk about a beautiful place! We are so blessed to be living in California. I never want to leave! You try to take a look at that beautiful ocean and tell me you hate it.

Damian brings his puppy, Free, everywhere and the beach was no exception.

Practically every restaurant on the pier had clam chowder samples. It's amazing how different each and every one tasted.

Look at the gorgeous view! If you look closely you can see sea otters basking in the sun.

BOY! I could have sworn we were having a girl since my pregnancy has been so different, but after looking at the ultrasound it was definitely a boy. I am so excited to have another mama's boy! I'm measuring at almost 15 weeks which is nuts since I'm only 13 weeks. I think this is going to be a big boy! I couldn't believe how big the baby looked compared to two weeks ago.

Baby is the size of a: lemon or orange...it's hard to tell with this big boy!

How far along?: 13 weeks but measuring almost 15 weeks

Food cravings: sweets, sushi (vegetable), steak, smoothies, fruit, quad shot espresso (don't worry I haven't succumbed), Japanese food

Food aversions: In-and-Out (I was so excited to eat it when I came to Cali and I can't even stomach it), pizza, chicken, anything greasy, anything fried

How I'm feeling: crappy. I've had horrible migraines, nausea (no vomiting), and fatigue. I'm hoping it starts to fade soon! I haven't been able to stay on top of the housework because the migraines have been so debilitating

What I miss: coffee, soft cheese, hot baths, the ability to soak in a hot tub, being able to stand up for longer than 20 minutes without feeling like I will faint.

Exercise: I've been using the Tracy Anderson Pregnancy Project DVD's 3 times a week and children's yoga with my son daily.

Maternity Clothes: maternity jeans and some t-shirts. Nothing too crazy yet!

Sleep: I've been waking up in the middle of the night. Whomp whomp.

Emotionally: So far, so good!

Friday Favorites: Mother's Day Gifts - Simple & Pure

I have to share with you guys one of my latest obsessions. If you've read my blog since the beginning you probably noticed my Friday Favorites posts have taken a back seat to my monthly favorites videos (which will resume this weekend). Well, I'm bringing it back! I am a huge supporter of small businesses, and when Simple & Pure emailed me I wanted to try their handmade products immediately! Scents like Cupcakes + Ice Cream and Tropical Cupcake seduced me and I'm never turning back.

Most of you know how much I love cake and anything vanilla scented. No matter what handbag I carry I always make sure my Cupcakes + Ice Cream lotion is with me. The scent makes me wish I could eat my arm off...but in a good way. Now, that the weather is heating up I love to lather on my Tropical Cupcake lotion after washing with the matching scrub. The tropical fruits mixed with the buttercream frosted cake scent is the perfect summer combo for me. The lotions are extremely hydrating because they are made with ingredients such as shea butter, sunflower oil, aloe, and silk. Silk! Talk about smooth.

Don't get me started on the bubble bath salts! As a stay at home mom I don't get as much "me time" as I did when I was a working mother. Okay, so driving home or taking a shopping trip alone might not be "me time" to some of you but it was to me. I don't like being away from my son so taking a nice bath helps me rewind, sit, and let my mind wander..kid-free. The scents of the salts are pure heaven. I never want to leave my bath!

The Honest Company: An Honest Review

When I was presented the opportunity to spread the word about The Honest Company I was more than excited. I have been with the company since the beginning and have personally tested almost every one of their products. If you follow me on instagram you have probably seen a couple pictures of my favorite Honest products. As soon as I found out their products were safe for my entire family, sustainable, and each purchase equaled a donation to Baby2Baby.org I knew I had to try them. Boy, am I glad I did! Not only does The Honest Company put out amazing eco-friendly products, but they have some of the best customer service around. Every employee I have ever talked to on the phone has been friendly, more than helpful, and I know they really take what I have to say to heart.

Did I mention that you don't have to leave your house to get them? As modern moms, a lot of us don't have the time to run to the store. You order online and The Honest Company will mail you your items to your doorstep when you want. Might I also add that their packing is one of the cutest around.

I made the switch in my bathroom at the perfect time. As many of you know, I recently moved cross-country and purchased a couple "conventional" cleaning supplies right away. I couldn't stand the chemical smell or the need to wear gloves. Let's be honest here (pun only partially intended), as a pregnant woman I needed to get away from the harmful fumes. The Honest Company came to my rescue with new non-toxic products made for the bathroom that happen to be fume-free and smell absolutely delightful. The bathroom cleaner and toilet cleaner were exactly what I needed. No more stinky fumes or plastic gloves for this mama! I love how The Honest Company is constantly coming out with new products, that I always try, as well as keep improving their original products.

The multi-surface cleaner is an item I get in every shipment. It can be used all over the house to get rid of any grime, spills, messes, and it even naturally repels dirt. I use it on my kitchen surfaces and appliances, clean up spills on my floor, clean my bathroom fixtures, wipe down my furniture, toys, and more. The multi-surface cleaner is truly a staple in my household. I just can not say enough great things about it!

No more chemical-laden blue toilet water for me! The toilet cleaner is scented with tea tree eucalyptus which really transforms the toilet cleaning experience. No one really enjoys cleaning toilets but with the Honest toilet cleaner it isn't the dreadful task of the past. It effectively removes stains, mold, calcium, limescale, and mildew in a powerful, non-toxic one-two punch. All I had to do was let it sit for a couple minutes, lightly scrub, flush, and enjoy a sparkling clean toilet bowl.

Check out the bubbles from the bubble bath product! I wish this blog had scratch and sniff because the smell is divine! Think of your favorite orange dreamsicle growing up and you got it. The bubbles get so fluffy after only a couple small capfuls. My son has sensitive skin and traditional children's bubble bath products have always been out of the question for us. Honest created the perfect bubble bath for my children (and me) because it doesn't dry or irritate. In fact, the very first ingredient is aloe. Wondering how the tangerine dream scent is incorporated? No, it isn't from chemicals (duh!). It is from organic tangerine peel! Talk about getting back to nature.

Don't tell my son, but I totally use it for my mommy time.

I had to resist cleaning my bathroom for a while so I could show you just how wonderful the bathroom cleaner is. This transformation took me about 15 seconds to do. I simply sprayed, wiped down, and voila! My faucet sparkles again. The eucalyptus mint scent is so much better than those yucky fumes we're used to. I use the product all over my bathroom. I'm talking my bathtub, shower, toilet (excluding the bowl), counters, sink, and fixtures. I haven't had much luck with natural bathroom cleaners, but The Honest Company produced the very first one I love.

I am loving the sunshine here in California. It's supposed to be in the 90s all week long. You know I am going to be rocking the perfect preggy clothing...maxis! Pregnant Women Too Fat?

Whenever I am in the grocery store checkout, I am bombarded with magazines criticizing Kim Kardashian and Jessica Simpson calling them fat. Now the media is using Princess Kate as a comparison to show how much bigger they are. I just think this is so unfair. Kim and Jessica are both curvy and around 5'2" and Princess Kate is tall and naturally slender. I am not even a huge fan of Kim and Jessica, although I love their styles, but I feel like something needs to be said. On the other side the media is claiming Kate is too thin. No matter what ~~pregnant~~ women will be scrutinized.

Even if the women had similar body types...who cares?! Pregnancy is a beautiful thing and every body reacts differently. Some people only gain weight in the belly, some gain all over. Some women get acne, others get glowing skin. Some carry high, some carry low. What ever the case may be pregnancy is a beautiful thing. The focus is on growing a healthy child. Nothing else.

Pregnancy is one of the most precious times in a woman's life. The last thing any woman needs is feeling more self-conscious than she already is. I just wish the media would let these woman enjoy this time without being judged.

Preparing For A Little One: Packing For The Hospital

When Kaitlyn from Wifessionals emailed me asking to write a post about packing your hospital bag for birth I was more than excited! My water broke first so I had to scramble to pack my hospital bag. My son was premature and my bag wasn't prepared at all. I definitely learned what I did and did not need in my hospital bag and I am here to pass my experiences on to you!

For mama:

ID and insurance cards. These are kind of a given but it's necessary to add to the list when you start freaking out about going into labor.
Magazines, books, and/or puzzles. To help pass the time.
Hair tie. To tie back your hair during those intense hours.
Birth plan. Honestly, I didn't use mine but I know most women do.
Toothbrush and toothpaste. Duh. Oh and deodorant would be good too.
Makeup. I'm not talking a full face but you need mascara and concealer. Homegirl forgot concealer (and all my makeup) and let's just say I don't have any pictures of my face while I was in the hospital.
Travel shampoo, conditioner, and body wash. That first shower will be heaven sent after what your body just went through.
Socks and/or slippers, comfortable clothes, and cozy (nurse-friendly) pjs and bras. Don't even try to strut your cute little fashionable butt because you will be too exhausted to care.
Camera. To capture those first moments!
Money. Cash and change for vending machines and food in case the cafeteria might not be open 24/7.
Cell phone and charger. You need a charged up phone for the hurricane of phone calls and texts.
Notebook and pen. It's a smart idea to write down when feeding begins, which breast is used, how many dirty diapers, if they were pee/poop, etc.
Going home outfit. Don't think you're going to fit your pre-pregnancy clothes by now because you won't. Comfort comfort comfort.

For Baby:

Going home outfit. If the outfit doesn't cover the feet make sure you have socks. You want a cute outfit for the baby!
Car seat. Make sure it is installed and you know how to work it before it's time to bring baby home.
Blanket. Bring a receiving blanket for swaddling and warm one for the car ride home if it's chilly.
An extra bag. To help pack baby gifts and hospital swag.

That's it! Don't overpack and if you forget something someone can always go home and get it for you. Your job is to care and bond with your baby. Enjoy the nurses help while you have it and don't forget to ask as many questions as you want. Your life is about to change forever in the best way possible.

Big news! We're expecting another little coconut in our family! Yes, the baby is due during football season which should prove to be very interesting. Fingers crossed the baby doesn't come on game day!

I can't believe we are blessed enough to expand our family. We suffered a miscarriage last year - from a surprise pregnancy - and hearing the baby's heartbeat and seeing it move made my heart soar. Damian was very wiggly during his first ultrasound, whereas this baby was stretching and rubbing its face. Def an "aww" moment.

My coconut is so excited about the new addition to our family. When he was watching the ultrasound it looked like the baby was waving its hands and Damian thought the baby was saying "hi!" How cute is that?! Damian even has his own picture of the baby waving which he guards very closely. I just know he is going to be the best big brother. He loves kissing my belly and telling the baby he loves it.

You have probably noticed I haven't posted too much lately. I have been busy with the move, but I have also been feeling pretty yucky. The past couple weeks I have felt nauseous, fatigued, barely had an appetite, and suffered some pretty nasty migraines. There have been more days than not where I have been laying on the couch trying to wish the headaches away. Luckily, I haven't vomited this pregnancy and hopefully this stage will subside soon.

I am so thrilled to be able share this joyous news with everyone! I can't wait to update you all on my (most likely last) pregnancy journey.

I couldn't even think about blogging these past couple days. I haven't watched the news because I want to shield my coconut from the horror. He isn't old enough for me to explain things to him, and to be honest I don't want him to know the evils of the world yet. I have read the articles, viewed the pictures online, and am beyond speechless. My heart is broken for all those who have been affected by the Boston Marathon tragedy.

What scares me is there was a chance I could have taken Damian to see the race if we were still in Boston. The thought that I could have lost my coconut creates a pain I know doesn't compare to those who did lose their loved ones.

We can pray for the victims and their families and hope we can find the culprits who terrorized an event that will never be the same.

Please take the time to say "I love you" to your loves. I will be holding mine extra tight.

Green Monster Smoothie

Is there really anything that makes you feel like you're treating your body well than a green smoothie? I love making them because you can't even taste the veggies. My son asks for his greens on the daily. When you add sweet fruits like bananas and apples you can't even taste the veggies! I add a serving of BarleyLifeXtra to every smoothie because it contains 18 different fruits and veggies. It is my favorite whole food supplement for my family.

This will yield 2-3 servings depending on who it is. Often times I will load up the Vitamix so we have drinks throughout the day. If you are only making one serving use half a banana, 1 cup spinach, etc. to make 1 serving.

Ingredients:

1 cup water
1/2 avocado
1 carrot (I only had shredded on hand, but I always use whole with my Vitamix)
1 1/2 cups spinach or kale (I used spinach)
1 apple (I used Fuji)
2 tablespoons BarleyLife Xtra
1 banana
1 tablespoon chia seeds
1 serving protein powder (I like About Time)
3-4 drops SweetLeaf Stevia
5-6 cubes ice

Directions:

Add all ingredients to blender
Blend
Enjoy!
